If you haven’t heard of aquafaba, it is excellent for those who are vegan! Aquafaba is the liquid you get from a can of chickpeas. Now, before you freak out, hear me out! The fluid will transform as it gets whipped and become a white fluff, similar to a meringue. Because of the sugar and vanilla used, it gives a lightly sweet flavor. It does not taste like chickpeas at all!

Tips For Making Your Vegan Aquafaba Frosting 

We all could use a little help now and again. Here are some helpful tips that I found to make this frosting work and taste delicious. 

Stand Mixer 

While you don’t have to have a stand mixer, I do recommend using one. The reason is you will be taking a decent amount of time to whip up this recipe. To get your frosting to where it needs to be, it will require a lot of hand whipping. You can also use a hand mixer, but it will take a longer mix time as well.

Cream of Tartar 

This little ingredient is a must. The cream of tartar will help to stabilize your chickpea water and create those stiff peaks you want. Although many other aquafaba frosting recipes say this ingredient is optional, I say it’s a mandatory ingredient if you want a stiffer peaked frosting. 

Chickpea Water

I find that reaching for canned chickpea liquid works best. You want the water to be starchy and thick, which means you will have a better frosting at the end. However, you can also make chickpeas from scratch. I have made them in my Instant Pot many times.

How Does Aquafaba Work Like Egg Whites? 

Aquafaba has around 1% protein while an egg white is around 10% protein and 90% water content. Since chickpea liquid is full of starch, sugar and saponins (a chemical), it will act similar to an egg white when it gets whipped. You will see it begin to foam and set up into stiff peaks as an egg white would. 

Because of this, you are then able to add in confectioner’s sugar and vanilla along with the cream of tartar and give it that meringue-like texture. For someone who is vegan, this is a great way to make homemade desserts. Fold into recipes like you would meringue or stiff egg whites, or make into frosting as you see in this recipe here.

Instructions

 

1) In bowl of a stand mixture or a regular large bowl, combine the chickpea water and the cream of tartar.

2) Beat it on high for 10 to 15 minutes until if forms soft peaks.

3) Add the sugar and the vanilla extract and beat on high for another 10 minutes until it forms stiff peaks.

4) Use immediately and keep it under refrigeration.

  • TIP: For this frosting, you need the water to be starchy and a bit slimy, like canned chickpea water. If using chickpea water from scratch, use 1 cup of soaked chickpeas (1/2 cup of dried chickpea) and 2 cup of water. Pressure cook for 1 hour and let it vent naturally. The chickpeas with be very soft and would be perfect for hummus and the water will be starchy.
