I’ve listened to my husband talk about how he had to troubleshoot some electrical devices and use something called Ohm’s Law to figure out electrical current and voltage and I checked out somewhere between Ohm’s and Law. It sounds difficult. But has he ever tried to get our kids to eat vegetables and like them? Now that is difficult and something I’m sure Mr. Ohm never figured out!

It is no secret that I am in love with my Instant Pot and I’m sure many of you are also. It may seem pricey to some, but it’s definitely an investment worth making. This is because it’s an amazing kitchen tool that will save you loads of time and effort. The Instant Pot removes multiple steps and turns them into one step when making quinoa, rice, and the like. It takes the ten or 20 minutes you use on the stovetop and turns it into just five measly minutes.

I use quinoa often and when I first made this Instant Pot Thai Quinoa Salad, I couldn’t believe how fast it was on the table. Imagine finishing up a long day and then remembering you still have dinner to cook. No problem. Just pull out that Instant Pot, grab this quinoa salad recipe and have a delicious and healthy dinner on the table in 25 minutes from start to finish.

Let’s face it. We all get tired of the same old recipes. And if we’re tired of the same old recipes, imagine how our kids feel about the same old recipes. Well, I decided to utilize my Instant Pot and come up with something unique. After much thought, trial and error, and taste testing, my Instant Pot Thai Quinoa Salad was born. This recipe has an overabundance of delicious veggies, plus the quinoa is the ideal grain to help give your body exactly what it needs. 

 

How Do You Make Instant Pot Thai Quinoa Salad?

 

It’s mind-blowing how simple and easy this quinoa salad is. Wash and drain your quinoa, then add it with the water and salt to the Instant Pot (which takes about 15-20 minutes). Add the rest of the ingredients for the salad to the quinoa and stir well. Whisk together all the ingredients for the dressing, pour over the quinoa mixture, toss it a bit, and voila, dinner is served! See how easy that was?

Is Quinoa Good in Salad?

Is quinoa good in salad?! You ought to be ashamed for even asking such a question! LOL! I’m kidding….sort of. Quinoa is amazing in a salad! I’ve made some amazing dishes involving quinoa. Some of my favorites include Instant Pot Black Bean & Quinoa Salad and Instant Pot Mexican Red Beans & Quinoa

 

Quinoa helps add more filling to the salad that most salads are missing. If you have a medium-sized family, feeding everyone with just protein and veggies can be hard. Since this recipe is Soy-Free, Gluten-Free, Vegetarian, Vegan, and Low Carb, it’s very loved by everyone in our family, including our pickiest eater. No one bats an eye around here when there is quinoa in a salad and the kids love it! 

 

How do you cook quinoa in the Instant Pot? It’s quite easy, actually. When I began cooking this grain, I had no idea what I was doing. The Instant Pot opened up a whole new world of cooking for me.

What is Thai Food?

I’m sure you’ve seen a Thai restaurant in the city or one came up in your internet searches for restaurants but were too scared to venture inside and order from the menu. I’ve made a few Thai recipes on the blog and they are actually some of my most favorite recipes! One of my favorites is called Instant Pot Thai Chickpea Salad with Curry Peanut Dressing. This is a yummy recipe. Give it a try and you’ll soon see why our family loves it so much. 

 

Thai food is the national cuisine of Thailand. That means anything that is considered Thai food is inspired by Thai cuisine. You’ll find that dishes that are considered Thai are very light, but also very strong on the spices. Most of the time Thai food is also considered a bit spicy, hence the curry peanut dressing mentioned in the above recipe.

Tips for Making Instant Pot Thai Quinoa Salad

 

  • Be sure to thoroughly rinse your quinoa then drain it before cooking. Quinoa contains saponin which is a chemical naturally found in the plant. If this isn’t removed, it can cause a bitter after taste. Plus, if you pre-soak your quinoa, it cooks better and comes out with a better texture.
  • Once the quinoa cooks for one minute, be sure to let it do a natural release. This completes the process of the quinoa cooking and may turn out partially uncooked if this step isn’t followed properly. 
  • Quinoa has a habit of cooling as a large lump. Be sure to fluff the quinoa once the natural release has completed. This way, when it cools, it won’t be a nightmare to work with.

 

How Long Does Quinoa Take in Instant Pot?

 

Quinoa officially cooks for one minute when prepared in an Instant Pot. However, with this recipe, you’re going to use the natural release which will add some time to that total. The pressure will build for about five minutes following the one-minute cooking time and then the natural release will be somewhere around ten minutes. The good news is, you don’t have to babysit the pot. Let it do its thing and when it’s ready, fluff that quinoa, add the rest of the ingredients, and serve that dinner or side dish! No standing over pots, waiting, stirring, babysitting, etc. Toss it in and when it’s finished, the recipe is basically ready. It can’t get any easier than that!

 

Does Quinoa Double in Size when Cooked?

Actually, quinoa triples in size when it’s cooked! In other words, if a recipe calls for three cups cooked quinoa, you’ll want only one cup of dry quinoa. It’s a great ingredient to keep around because it’s very healthy and contains a lot of nutrients vital to the body. Outside of that, it’s not super expensive and only one cup turns into quite a bit of food. This means it’s a great addition to meals because it acts as a healthy filler.

Why Does My Quinoa Come Out Mushy?

More often than not because too much water was added to the pot. Once the quinoa is finished cooking on a traditional stove, you’ll want to drain the excess water from it before letting it sit and fluff up. If you don’t, you’ll end up with mushy quinoa and that’s just not very satisfying. However, the great thing about this quinoa salad recipe is that it’s made in the Instant Pot! If you follow the directions, you won’t have to worry about all those steps when making your quinoa. You’ll end up with a perfect, fluffy dish every time.

 

Both the Instant Pot and quinoa can be intimidating when you’re first introduced to them. I promise both are easy to use and both are great additions to the kitchen. When you team them up, you end up with delicious creations like this Instant Pot Thai Quinoa Salad!

How To Make Instant Pot Thai Quinoa Salad

Serves – 4 to 6 

Ingredients

Instant Pot Thai Quinoa Salad

  • 1 cup uncooked Quinoa
  • 1 cup of Water
  • ½ teaspoon of Salt
  • 1 cup of sliced Red Cabbage
  • 1 cup of julienned Carrots
  • 1 red Bell Pepper, julienned
  • ¼ cup of sliced Green Onions /Scallions
  • Chopped Peanuts and Cilantro to garnish
Dressing

Instructions

Wash and drain the quinoa. See the complete recipe below for more.

Add washed and drained quinoa into the instant pot or pressure cooker insert.

Pour in a cup of water and salt.

When Instant Pot beeps, allow the pressure release naturally.

While the quinoa cools, make the dressing. In a bowl, combine the peanut butter, coconut aminos, honey, sriracha, and the juice f 1 lime. Whisk till smooth.

Once the quinoa is cooled, add the sliced cabbage, julienned carrots, red bell pepper, and green onions. Give it a good mix.

Ingredients

  • 1 cup uncooked Quinoa
  • 1 cup of Water
  • ½ teaspoon of Salt
  • 1 cup of sliced Red Cabbage

  • 1 red Bell Pepper, julienned

  • 2 tablespoons of Honey

    2. Place the washed and drained quinoa in the Instant Pot insert.
    3. Add a cup of water and salt.
    4. Select the “Pressure Cook” mode and adjust the time, with the “- / +” to 1 minutes.
    5. When Instant Pot beeps, let the pressure release naturally.
    6. Fluff the quinoa with a fork and let it cool to room temperature.
    7. While the quinoa cools make the dressing. In a bowl combine the peanut butter, coconut aminos, honey, sriracha and the juice f 1 lime. Whisk till smooth.
    8. Once the quinoa is cooled add the sliced cabbage, julienne carrots and red bell pepper and green onions. Give it a good mix.
    9. Pour the dressing over the quinoa and the vegetables and toss to coat.
    10. Divide among serving bowls and garnish with roughly chopped peanut and cilantro and more lime wedges.

Notes

  • If not allergic to soy, use soy sauce instead of coconut aminos

  • Sriracha provides a subtle heat to the dressing. You can reduce the quantity or skip it altogether, if you are intolerant to heat.
