My family loves chicken. It’s packed with protein, it’s a lean meat, and it’s healthy. But let’s be honest, even something as tasty as chicken needs a little variety, right? Although I’ll be using my Instant Pot to make this chicken tender and juicy, sometimes I like to alter how I prepare it. 
 
The great thing about the Instant Pot is it does all the work for you. Toss in the chicken, press a few buttons, and have a seat until it beeps. This is why this magic gadget is my all-time favorite kitchen appliance. It’s also the reason why I’m not ashamed to say that I own 4 of them! The creator of the Instant Pot is a lifesaver for busy families.

Instant Pot Chicken Teriyaki Meal Prep 4 Ways

First, I’ll layout for you what ingredients and steps to take for preparing all 4 meals. Then, I’ll share with you my 4 individual recipes that include Teriyaki Chicken Pitas, Teriyaki Chicken and Cauliflower Rice, Teriyaki Chicken Stir Fry, and Teriyaki Chicken Buddha Bowls!

Instant Pot Soy Free Alternative

Because I love you all and I enjoy sharing all my tips and Instant Pot healthy chicken recipes, here are 4 super simple ways that you can make Instant Pot Chicken Teriyaki into different meals with ease! Just a note, for these recipes they are all soy free because as many of you know, my youngest cannot have soy anymore. How to make Instant Pot Chicken Teriyaki Meal Prep 

Gather up the ingredients below and grab your instant pot to get started. This will only take about 15 minutes, so it doesn’t take a ton of time prepping!

Instant Pot Chicken Recipe Ingredients: 

  • 1 lb. chicken fillets (or chicken breast cut in half lengthwise)
  • 1 cup soy-free “faux” soy sauce. I make my own in my instant pot.
  • 1/2 cup ketchup (soy-free brand)You can also make this in your instant pot
  • 1 cup brown sugar you can use something like swerve for lower carbs
  • 1 tsp ground ginger
  • 2-3 tsp cornstarch (tip: mix with 2 tsp water to make a slurry)

 

Egg Bite Containers Ingredients:

  • 1/2 cup cauliflower florets (frozen or fresh) – 2 eggs bite cups
  • 1/4 cup shell pasta – 1 egg bite cup
  • 1/4 broccoli florets (frozen or fresh) – 1 egg bite cup
  • 2 tbsp chopped bell peppers – 1/2 egg bite cup
  • 2 tbsp chopped carrots – 1/2 egg bite cup
  • add 2 tbsp quinoa – 1/2 egg bite cup
  • 2 tbsp canned black beans – 1/2 egg bite cup. Now, usually I  use fresh black beans as they are cheaper and lower in sodium. I just make them in my instant pot or pressure cooker. 
  • 2 tbsp corn – 1/2 egg bite cup

Uncooked Ingredients for Chicken Meal Prep:

  • 1/4 cup romaine lettuce
  • fresh jalapenos slices
  • 2 tbsp cilantro
  • 1 pita or wrap
  • 1/2 cup coleslaw or salad mix. I personally love my own homemade coleslaw
  • 1 tbsp green onions
  • 2 tsp shredded carrot
  • 1/4 cup cherry tomatoes

Chicken Meal Prep Directions

1) Mix together the easy Teriyaki sauce that includes only 4 ingredients (excluding cornstarch added after sauteing): soy sauce, ketchup, brown sugar and ginger directly in the Instant Pot.

2) Add the chicken to the bottom of the Instant Pot and push under the sauce. Place the trivet on top of the chicken.

 

 

3) Fill an egg bite tray with the ingredients listed above. Be sure to fill the quinoa and pasta cups with water (about 1/2 cup).

 

 

Egg Bit Tray Filling:

1 container with shells and fill with water
1 container half full of quinoa and fill with water
2 containers cauliflower
1 container broccoli
One container bell peppers and carrots
1 container black beans and corn

4) Lower the egg bite tray to rest on top of the trivet. Do not cover. Below is the trivet I used-

5) Close the lid and turn the pressure valve to sealing. Cook on high pressure using “manual” or “pressure cook” for 4 minutes. Do a quick release.

 

 

6) Remove the lid. Take out the egg bite tray and the chicken. Let the chicken rest while making the sauce and then slice.

7) To make the sauce, you will want to bring the liquid in the Instant Pot to a simmer using the sauté function. Whisk in the corn starch. Continue to stir until it thickens, approximately 1 to 2 minutes.

 

Meal Prep Time

The entire process should take 10-15 minutes.

NOTE: These are the directions for how to do prep ALL the meals at once. Down below I break it down more in case you only want to do ONE of the meals.

How to make Chicken and Cauliflower Rice (full meal version)

1) Mix the soy sauce, ketchup, brown sugar, and ginger together in the Instant Pot insert.

2) Add the chicken and push under the sauce.

 

3) Place a trivet on top of the chicken.

4) Add the cauliflower to an oven safe container that fits in the Instant Pot. Then place the container in the Instant Pot on top of the trivet. Do not cover.

 

5) Close the lid and turn the pressure valve to sealing. Cook on high pressure using the “manual” or “pressure cook” setting for 4 minutes then do a quick release.

 

6) Open the lid and remove the cauliflower and chicken. Let the chicken rest for 5 minutes then slice it.

 

7) Use a fork or potato masher to break the cauliflower into pieces to form cauliflower rice.

8) To make the teriyaki sauce, bring the liquid in the Instant Pot to a simmer using the sauté function. Then whisk in the cornstarch. Continue to stir until the sauce thickens.

 

 

 

 

9) Serve the chicken on top of the cauliflower rice. Drizzle with mouth watering teriyaki sauce and garnish with green onions.

Once done, mix in your pieces of cooked chicken and stir well. Top with delicious teriyaki sauce and freshly sliced green onions.

To meal prep this, just take cauliflower rice and add it to a lunch portion container. Then top with your teriyaki chicken. Pick whatever other sides you want like orange slices and celery sticks.

Easy Teriyaki Chicken Stir Fry Ingredients

 

How to make Easy Teriyaki Stir Fry Sauce in an Instant Pot

1) Mix the soy sauce, ketchup, brown sugar, and ginger together in the Instant Pot insert.

2) Add the chicken and push under the sauce.

 

3) Place a trivet on top of the chicken.

4) Add the broccoli, bell peppers, and pasta to an oven safe container that fits in the Instant Pot. Then place the container in the Instant Pot on top of the trivet.

 


5) Pour the 2 cups of water over the pasta. Do not cover.

 

 

6) Close the lid and turn the pressure valve to sealing. Cook on high pressure using the “manual” or “pressure cook” setting for 4 minutes then do a quick release.

 

7) Open the lid and remove the container and chicken. Let the chicken rest for 5 minutes then slice it.

8) To make the teriyaki sauce, bring the liquid in the Instant Pot to a simmer using the saute function. Then whisk in the cornstarch. Continue to stir until the sauce thickens.

 

9) Serve the pasta topped with chicken, broccoli, and bell peppers. Drizzle the teriyaki sauce over top and garnish with green onions.

 

 


Note: Mix it up by adding different veggies each time you make it. You can use carrots, snow peas, onions, bok choy, etc.

To meal prep the chicken stir fry, take a meal prep container and add the pasta & veggies. Then top with the teriyaki chicken. Serve with fruit such as blueberries and a veggie on the side such as carrots.

Ingredients needed for Chicken Buddha Bowls

How to make Teriyaki Chicken Buddha Bowls

All you need to do is take your glass bowl and start adding in the layers of ingredients as they are listed above. Put your black beans and corn on the bottom, followed by your quinoa, chicken, etc.

Once you get through the entire ingredient list, start over and do it again. Each Buddha Bowl should have the ingredients layered two times. But here’s step-by-step: 

1) Mix the soy sauce, ketchup, brown sugar, and ginger together in the Instant Pot insert.

 


2) Add the chicken and push under the sauce.

 

3) Place a trivet on top of the chicken.

4) Wrap and oven safe container that fits inside the Instant Pot with a piece of foil. Bend the middle of the foil up to make a section divider for the bowl.

5) Add the quinoa and water to one section, and the corn and black beans to the other.

 

 

6) Place the dish on top of the trivet. Close the lid and turn the pressure valve to sealing. Cook on high pressure using the “manual” or “pressure cook” function for 4 minutes. Do a quick release.

 

7) Remove the dish and the chicken. Let the chicken rest for 5 minutes then slice it.

 

8) To make the teriyaki sauce, bring the liquid in the Instant Pot to a simmer using the sauté function. Then whisk in the cornstarch. Continue to stir until the sauce thickens.

 

 

 

9) Place the lettuce on the bottom of a bowl. Then add the chicken, corn, black beans, and other toppings over the lettuce. Drizzle the teriyaki sauce on top and serve.

 

 

Please note: To pack this delicious dish for your lunch, you will need a mason jar.

Fill the mason jar by layering it with all the ingredients. There you will have your yummy Teriyaki Buddha Bowl in a jar!

Helpful tips for creating simple Instant Pot Chicken Teriyaki Meals

    • Use frozen vegetables to save time chopping. If you don’t use all the frozen vegetables, just freeze them again to use later.
    • If using frozen chicken, be sure to do a natural pressure release in your Instant Pot.
    • Do I have to make the chicken separate for each dish? The answer to that is NO! I just show it like that in case you want to only prep one meal or two meals. But yes, feel free to make chicken in bulk to have on hand. I do this a lot and I also do it with beans, chickpeas, etc! 
    • You can also make full-sized meals later in the week for dinner with the left-over ingredients. No need to be wasteful, right?!
    • Double the recipe to feed 2 people by using a second egg bite tray. (It’s seriously as simple as that!)

Ingredients

Teriyaki Chicken

  • 1 lb. chicken fillets (or chicken breast cut in half lengthwise)

Instructions

Teriyaki Chicken Meal Prep

1) Mix together the soy sauce, ketchup, brown sugar and ginger in the Instant Pot.

7) To make the sauce you will want to bring the liquid in the Instant Pot to a simmer using the sauté function. Whisk in the corn starch. Continue to stir until it thickens. About 1–2 minutes.

8) Assemble meals following the below order. Store in the fridge for 4-5 days. Entire process should take 10-15 minutes.

Teriyaki Chicken Pitas

1) Fill your pita with the Instant Pot chicken recipe from above, and add in your salad. Once combined, topped with your teriyaki sauce. Enjoy!

Teriyaki Chicken Cauliflower and Rice Full Size

  • 1 small head cauliflower (chopped)
  • 1-2 lb. chicken fillets (or breast cut in half lengthwise)
  • 1 cup brown sugar
  • 1 cup soy-free "soy sauce"
  • 1/2 cup ketchup (soy-free brand)
  • 1 tsp ground ginger
  • 2-3 tsp cornstarch

1) Mix the soy sauce, ketchup, brown sugar, and ginger together in the Instant Pot insert.

2) Add the chicken and push under the sauce.

3) Place a trivet on top of the chicken.

4) Add the cauliflower to an oven save container that fits in the Instant Pot. Then place the container in the Instant Pot on top of the trivet. Do not cover.

5) Close the lid and turn the pressure valve to sealing. Cook on high pressure using the "manual" or "pressure cook" setting for 4 minutes then do a quick release.

6) Open the lid and remove the cauliflower and chicken. Let the chicken rest for 5 minutes then slice it.

7) Use a fork or potato masher to break the cauliflower into pieces to form cauliflower rice.

8) To make the teriyaki sauce bring the liquid in the Instant Pot to a simmer using the sauté function. Then whisk in the cornstarch. Continue to stir until the sauce thickens.

9) Serve the chicken on top of the cauliflower rice. Drizzle with teriyaki sauce and garnish with green onions.

 Once done, mix in your pieces of cooked chicken and stir well. Top with some teriyaki sauce and freshly sliced green onions.

NOTE: To meal prep this, you can just take cauliflower rice and add it to a lunch portion container. Then top with your teriyaki chicken. Pick whatever other sides you want like orange slices and celery sticks. 

Teriyaki Stir Fry Full Size

  • 1-2 lb. chicken fillets (or breast cut in half lengthwise)
  • 1 cup soy-free "soy sauce"
  • 1 cup brown sugar
  • 1/2 cup ketchup (soy-free brand)
  • 1 tsp ground ginger
  • 2-3 tsp cornstarch
  • 1 cup medium shell pasta
  • 2 cups water
  • 2 cups frozen broccoli
  • 1 bell pepper chopped

1) Mix the soy sauce, ketchup, brown sugar, and ginger together in the Instant Pot insert.

2) Add the chicken and push under the sauce.

3) Place a trivet on top of the chicken.

4) Add the broccoli, bell peppers, and pasta to an oven save container that fits in the Instant Pot. Then place the container in the Instant Pot on top of the trivet. 

5) Pour the 2 cups of water over the pasta. Do not cover.

6) Close the lid and turn the pressure valve to sealing. Cook on high pressure using the "manual" or "pressure cook" setting for 4 minutes then do a quick release.

7) Open the lid and remove the container and chicken. Let the chicken rest for 5 minutes then slice it. 

8) To make the teriyaki sauce bring the liquid in the Instant Pot to a simmer using the sautÈ function. Then whisk in the cornstarch. Continue to stir until the sauce thickens.

9) Serve the pasta topped with chicken, broccoli, and bell peppers. Drizzle the teriyaki sauce over top and garnish with green onions.

Note: Mix it up by adding different veggies each time you make it. You can use carrots, snow peas, onions, bok choy, etc.

Now to meal prep the chicken stir fry take a meal prep container and add the pasta & veggies. Then top with the teriyaki chicken. Serve with fruit like blueberries & a veggie on the side like carrots.

Teriyaki Chicken Buddha Bowls Full Size

  • 1-2 lb. chicken fillets (or breast cut in half length wise)
  • 1 cup soy-free "soy sauce"
  • 1 cup brown sugar
  • 1/2 cup ketchup (soy-free brand)
  • 1 tsp ground ginger
  • 2-3 tsp cornstarch
  • 1/2 cup quinoa
  • 1 cup water
  • 1 cup frozen corn
  • 1 cup canned black beans (drained and rinsed)

Bowl Toppings:

  • 2 cup romaine lettuce chopped
  • 1 jalapenos sliced
  • 1/4 cup cilantro
  • 1/2 cup grape tomatoes slices
  • 1/2 cup coarsely shredded carrots

1) Mix the soy sauce, ketchup, brown sugar, and ginger together in the Instant Pot insert.

2) Add the chicken and push under the sauce.

3) Place a trivet on top of the chicken.

4) Wrap and oven safe container that fits inside the Instant Pot with a piece of foil. Bend the middle of the foil up to make a section divider for the bowl.

5) Add the quinoa and water to one section, and the corn and black beans to the other.

6) Place the dish on top of the trivet. Close the lid and turn the pressure valve to sealing. Cook on high pressure using the "manual" or "pressure cook" function for 4 minutes. Do a quick release.

7) Remove the dish and the chicken. Let the chicken rest for 5 minutes then slice it.

8) To make the teriyaki sauce bring the liquid in the Instant Pot to a simmer using the sauté function. Then whisk in the cornstarch. Continue to stir until the sauce thickens.

9) Place the lettuce to the bottom of a bowl. Then add the chicken, corn, black beans, and other toppings over the lettuce. Drizzle the teriyaki sauce on top and serve.

Just fill the mason jar up by layering it with all the ingredients. There you will have your yummy Teriyaki Buddha Bowl in a jar! 

Notes

Tips: 

-Use frozen vegetables to save time chopping, plus the rest can be frozen again.

-If using frozen chicken be sure to do a natural pressure release. 

- You can also make full sized meals later in the week for dinner with the leftover ingredients. No need to be wasteful. I also include full size recipes in this post. 

- Double the meal prep recipe to feed 2 people by using a second egg bite tray.
