This Strawberry Cheesecake Icebox Cake is so dang good. And I’m loving the fact that even those who are gluten-free and soy-free can enjoy a slice as well. Who says that just because you’re allergic to something doesn’t mean that you shouldn’t have to miss out on everything altogether?! With the summer months calling your name, you’re going to want to make this delicious Icebox cake!

Can you use other fruit besides strawberry as the topping?

Absolutely. If you aren’t a strawberry fan, substitute another fruit. Blueberries are a great alternative and add so much fun flavor. Cherries are decadent. Raspberries are wonderful. You can also use blueberries WITH the strawberries to make Red, White & blue! Seriously though, if you aren’t a fan of fruit, you can even make this without a fruit topping. As long as you can eat it, you can try it as a topping!

Must you use a crust in this cake if you don’t want one?

Good question. If you don’t want to have a crust, you don’t have to have a crust. Obviously, when you scoop it out and serve it, it will be more like a whipped pudding since it won’t have a crust holding it into place, but the taste and flavor of the middle will be just as good! I like the crust though to balance the sweetness from the confectioners sugar.

This is the best part of the recipe! Leave your oven exactly how it is. The only appliance that you’re going to need is your fridge to let it cool and harden! This is why this dessert is perfect for any time of the year!

Now that you know a bit about this delicious recipe, let’s get right to the yummy cake recipe!

How do you store leftovers of this delicious icebox cake?

Storing leftovers of this cake is so simple and easy to do! Simply put it in an airtight container and keep it in your fridge until you’re ready to eat. It’s important to keep it refrigerated because of the added ingredients.

Can you freeze the leftovers of this Strawberry Cheesecake Cake?

You can! I always recommend freezing the leftover cake pieces in individual containers. That way you can enjoy it one piece at a time rather than having to unthaw the whole cake when you might just be wanting a slice. Just get a bunch of small freezer-proof containers and add in a piece of cake. Then, simply unthaw it up putting it into your fridge.

The taste and the flavor will still be the same but the texture might be a little bit different. Don’t worry, you’ll still love every single bite!

I will admit though, we never get a chance to freeze this. My family LOVES this recipe and gobbles it up each and every time! One of the best things too, this is allergy friendly for my soy allergy guy. So he can eat without worry.

This is just one dessert that you can make all year-long and get great results every single time. And if you’re wanting to give it a different taste, just have fun swapping out the fruit. It will keep it tasty and giving it a unique flavor every single time. (Plus, if you have fresh fruit-growing in your garden your cake will be that much more delicious!)
