I am a huge fan of steel-cut oats, but I don’t always have the time to cook them. After making steel-cut oats in the Instant Pot, my life has been forever changed. I no longer have to make steel-cut oats overnight; I can easily make them for breakfast anytime I want. Since the cooler weather is here, I wanted to create a pumpkin version of our morning oatmeal that the kids would enjoy also.

Instructions

 

1) Turn the Instant Pot to the “Sauté” mode and melt the butter. Let it turn brown. About 30 seconds.

2) Add the oats and “Sauté” for about 5 minutes, stirring intermittently, till the oats are slightly brown and fragrant.

3) Add the pumpkin puree, pumpkin pie spice, maple syrup and a pinch salt.

4) Add the water. Make sure that the water covers the oats completely.

5) Turn off the “Sauté” mode. Put the lid on, making sure that the pressure valve is in the “Sealing” position.

6) Select the “Pressure Cook” mode and adjust the time, with the “- / +” to 10 minutes.

7) When Instant Pot beeps, let the pressure release naturally. 

8) Open the lid and stir in half and half or any milk of choice. Mix well.

9) Ladle into serving bowls. Top with a generous drizzle of maple syrup and a sprinkle of pumpkin seeds.

10) Enjoy warm or at room temperature.

  • ¼ cup of Pumpkin Seeds to serve
