What I also love about this recipe is that it is soy-free and low-carb as well. This means that people avoiding soy or trying to eat low carb aren’t going to run into any issues when eating this. In our house, that’s a big deal! Is it possible to make these mini egg bakes without meat?

Absolutely. If you’re wanting to cut down on the amount of meat that you’re consuming, you can just add in some extra veggies and remove the meat. We make these using turkey sausages but you could also use pork or beef too.

What other veggies could you add to these egg bakes? 

While the recipe already calls for broccoli, you could easily add in a few other vegetables as well. For someone who prefers things to be a bit spicier, consider adding in some fresh jalapenos for an extra kick.

Adding in some red or green pepper bites can also be a great way to up the extra vegetables, too. Just make certain that whatever vegetables you add in that you cut them down into smaller bite-size pieces so that they don’t seem clunky in the recipe.

How to meal prep these mini egg bakes for the week

One of the biggest bonuses of this simple egg recipe is that you can easily meal prep with it. I love creating this recipe ahead of time and then cooking it up in the air fryer the next day. 

They also make for really great leftovers as well. Keeping them in the fridge is a great way to store them once they’re cooked and when you’re hungry you can just pop a few in the microwave and chow down. My kiddos love this as well and they like the fact that they can easily heat up their own snack or dinner when the craving hits.

Crisp Lid Sausage and Broccoli Mini Egg Bake

Serves – 6

Air Fryer or Crisp Lid Mini Egg Bake

Ingredients

  • 6 Large Eggs
  • 1 lb. Turkey Sausages
  • 1 medium-sized Onion, chopped
  • 2 fat cloves of Garlic, minced
  • 1 Red Bell Pepper, diced
  • 1 small head of Broccoli, separated into tiny florets
  • ½ cup of Shredded Cheddar Cheese
  • ½ cup of Half and Half
  • 1 tablespoon of Olive Oil
  • Salt and Pepper to taste

Instructions

Turn the pressure cooker on Saute and let heat up. Add oil and turkey sausage. Let brown for 3 minutes.

Add onions and saute for another 2 minutes.

Add the bell pepper and broccoli. Saute for 3 to 4 minutes until the broccoli florets soften.

Turn off saute and transfer mixture to a plate. Crack 6 eggs in a bowl, add half & half, salt and pepper and whisk.

Grease ramekins. Add 1/4 cup of the sausage-broccoli, top with egg mixture and sprinkle with cheddar cheese.

Ingredients

  • 6 Large Eggs
  • 1 lb. Turkey Sausages
  • 1 medium sized Onion, chopped
  • 2 fat cloves of Garlic, minced
  • 1 Red Bell Pepper, diced
  • 1 small head of Broccoli, separated into tiny florets
  • ½ cup of Shredded Cheddar Cheese
  • ½ cup of Half and Half
  • 1 tablespoon of Olive Oil
  • Salt and Pepper to taste

Instructions

  1. until the display shows ‘HOT’.
  2. Add the olive oil and the turkey sausage and let it brown for a 2 to 3 minutes.
  3. Add the diced onions and garlic and sauté for another 2 minutes or till the onions look translucent.
  4. Next add the diced red bell pepper and the broccoli. Sauté for 3 to 4 minutes, stirring intermittently, till the broccoli florets softens slightly. 
  5. Turn off the sauté mode and transfer the sausage-broccoli mix into a large plate to cool slightly.
  6. In a large bowl crack 6 eggs, add the half and half, salt and pepper and whisk it till smooth.
  7. Grease 6 (8 oz.) ramekins. 
  8. Add about ¼ cup of the sausage-broccoli mixture into each ramekin. Top with egg mixture. Sprinkle about 1½ tablespoon of shredded cheddar cheese on top of each ramekin.
  9. Place the tall trivet inside the insert of your Multi-Pot. Place the Crisp Lid Basket on top of the trivet.
  10. Place 3 filled ramekins in the Crisp Lid Basket.
  11. Put the Crisp Lid on top of the Multi-Pot insert.
  12. Air Fry at 320 F for 10 minutes.
  13. Repeat with the remaining 3 ramekins.
  14. Serve immediately with sliced green onion and hot sauce.

What are the benefits of adding eggs into your diet? 

Eating eggs in your diet is a great way to get some much-needed protein for your diet. Who knew that those little nuggets could pack such a big punch?! 

In addition to protein, they’re also loaded with B12 vitamins and iron, too. There’s a lot of debate about eating certain parts of the eggs over others but I think that the whole egg is a great way to add a balanced and delicious diet to your everyday life. 

And from a financial point of view, eating eggs is a great way to save some money, too! Eggs are super cheap at the store and can be a replacement here and therefor expensive meat items that you’re used to buying for dinner.

How do you check and see if eggs are still good to eat?

Maybe I’ve learned this from the good ol’ days but I’m always checking the eggs that we buy to make certain that they’re good. It’s a simple process that doesn’t take long at all but it gives you peace of mind when you’re cracking and cooking up those eggs. 

All you need to do is take a cup and fill it about 1/2 full of water. Next, grab your egg and gently drop it down into the water in the cup. If the egg sinks to the bottom, it means that it’s fresh and good to eat. However, if your eggs float to the top, this means that it’s no longer good and you need to toss the sucker in the trash! 

I even toss out ones that sink super slow to the bottom because in my mind that just means that they’re an older egg that can’t make up its mind! Better safe than sorry when it comes to feeding the family!
