Air Fryer Mexican Street Corn Nachos

Let’s be honest. There are few comfort foods in the snacking world that are better than a nice, giant plate of nachos. That is until I created these Air Fryer Mexican Street Corn Nachos. One bite of this delicious pile of goodness and you’ll be hooked.
 
 
Is there anything better than nachos? You know what I’m talking about, right? That pile of crunchy goodness that can turn any frown upside down? Why wait until the next carnival, festival or trip to a restaurant when you can enjoy a plate of this delicious food right in the comfort of your own home. 
 

 

Can you leave out the corn from this recipe if you want?

Absolutely, of course you can. Some people like corn in their food, others don’t. We add it because we like it, but that doesn’t mean that you have to. If you want to leave out the corn, leave it out. It’s really is as simple as that. Just note too that if you do leave the corn out, that kinda takes away from the Mexican Street Corn Nacho recipe though and just becomes….nachos. 😉

Why does this recipe specifically call for Cotija Cheese?

Cotija is a Mexican or hispanic style cheese that is specifically named after the town of Cotija in Mexico. Cotija is a hard, crumbly cheese that is made mainly from cow’s milk. It is wonderful for grating over salads, pasta, nachos & more!
 
Cotija cheese is really delicious and a lot of people think that it resembles feta cheese. This cheese is available at most supermarkets- if you don’t see it, ask. Also Whole Foods and other specialty stores carry it as well.  
 
This nacho recipe is one that you can literally make any time of the day. Who says you can’t have nachos for breakfast, lunch, and dinner?!

Air Fryer Mexican Street Corn Nachos (Soy Free!) (Soy Free, Gluten Free, Vegetarian)

 

Serves – 4

 

Ingredients to make homemade street nachos

 

  • About 4 cups of Air Fryer Tortilla Chips (I use semi- homemade)

  • 1 (15 oz.) can of No Salt Added Whole Corn Kernels, drained. You can also use fresh corn if you prefer. I do when I have it on hand. I also freeze corn ahead and use that too.

  • ¼ cup of finely diced Red Onion

  • 2 tablespoons of seeded and finely diced jalapeno

  • 1 teaspoon of Chili Powder

  • add 1 teaspoon of Smoked Paprika

  • 1 cup of shredded Monterey Jack Cheese

  • A ½ cup of Cotija Cheese

  • Olive Oil Cooking Spray

  • Chopped Cilantro to Garnish

 

Instructions to make nachos

Line the air fryer basket with foil and generously spray with olive oil on all sides.

In a bowl, combine the corn, diced red onion and jalapeno, chili powder and smoked paprika. Mix well.

Evenly layer the tortilla chip in the air fryer basket.

Top with a ½ cup of shredded Monterey Jack cheese.

Now evenly spread a layer of the corn mixture.

Top with the remaining ½ cup of Monterey Jack cheese.

Sprinkle about a ¼ cup of the cotija cheese on top of the Monterey Jack cheese.

Air Fry at 350 for 6 minutes.

Sprinkle the remaining ¼ cup of cotija cheese and a handful of torn cilantro and serve immediately.

 

Can you save and reheat these nachos for later?

This is debatable. If you’re like me and my family, we like our nachos to be super crisp and crunchy. And while it might be tempting to save the leftovers and eat them later, just know that they aren’t going to have that crunchy nacho consistency.

BUT, I can say that if you want to save them for later, they’ll still have that same delicious taste and flavor. My recommendation? Just make up a real quick batch if you’re wanting to eat them again for later. 

This recipe doesn’t take that much time at all and it’s a breeze to fix.

What can you serve with these Air Fryer Nachos?

While it might just be my opinion that nachos are a meal in themselves, to some people they are just an appetizer to enjoy. You can always pair them with tacos or other fun Air Fryer meals. 

And if you want to portray these nachos as an appetizer, that’s fine as well! You can make them be as big or as small as you’d like for whatever your hunger needs.

Can you add meat to these nachos?

Absolutely. While this recipe is specifically vegetarian, don’t be afraid to add the meat of your choice. Adding in some beef or shredded pork can add a ton of great flavor to this recipe.

I’ve found that chicken is also another great versatile meat that can really add a ton of flavor to your nachos, too. And if you’re making these nachos for a group of people, you can also make the meat separately. That way the nachos can remain vegetarian but if someone else wants to add-on some meat, they can do so without any compromise. That makes it so much more simple for everyone to get what they want!

 

If you’re looking for some delicious nachos, these are the ones for you. You can make them as the recipe above calls for or add in some spice. Remember to add in the hotness separately so you don’t burn out everyone who is wanting to taste them! You can’t cool down food once it’s got that hot spice added!
