Air Fryer Mexican Street Corn Nachos (Soy Free!) (Soy Free, Gluten Free, Vegetarian)
Serves – 4
Ingredients to make homemade street nachos
About 4 cups of Air Fryer Tortilla Chips (I use semi- homemade)
1 (15 oz.) can of No Salt Added Whole Corn Kernels, drained. You can also use fresh corn if you prefer. I do when I have it on hand. I also freeze corn ahead and use that too.
¼ cup of finely diced Red Onion
2 tablespoons of seeded and finely diced jalapeno
1 teaspoon of Chili Powder
add 1 teaspoon of Smoked Paprika
1 cup of shredded Monterey Jack Cheese
A ½ cup of Cotija Cheese
Olive Oil Cooking Spray
Chopped Cilantro to Garnish
Instructions to make nachos
Line the air fryer basket with foil and generously spray with olive oil on all sides.
In a bowl, combine the corn, diced red onion and jalapeno, chili powder and smoked paprika. Mix well.
Evenly layer the tortilla chip in the air fryer basket.
Top with a ½ cup of shredded Monterey Jack cheese.
Now evenly spread a layer of the corn mixture.
Top with the remaining ½ cup of Monterey Jack cheese.
Sprinkle about a ¼ cup of the cotija cheese on top of the Monterey Jack cheese.
Air Fry at 350 for 6 minutes.
Sprinkle the remaining ¼ cup of cotija cheese and a handful of torn cilantro and serve immediately.
Can you save and reheat these nachos for later?
This is debatable. If you’re like me and my family, we like our nachos to be super crisp and crunchy. And while it might be tempting to save the leftovers and eat them later, just know that they aren’t going to have that crunchy nacho consistency.
BUT, I can say that if you want to save them for later, they’ll still have that same delicious taste and flavor. My recommendation? Just make up a real quick batch if you’re wanting to eat them again for later.
This recipe doesn’t take that much time at all and it’s a breeze to fix.
What can you serve with these Air Fryer Nachos?
While it might just be my opinion that nachos are a meal in themselves, to some people they are just an appetizer to enjoy. You can always pair them with tacos or other fun Air Fryer meals.
And if you want to portray these nachos as an appetizer, that’s fine as well! You can make them be as big or as small as you’d like for whatever your hunger needs.

Can you add meat to these nachos?
I’ve found that chicken is also another great versatile meat that can really add a ton of flavor to your nachos, too. And if you’re making these nachos for a group of people, you can also make the meat separately. That way the nachos can remain vegetarian but if someone else wants to add-on some meat, they can do so without any compromise. That makes it so much more simple for everyone to get what they want!
If you’re looking for some delicious nachos, these are the ones for you. You can make them as the recipe above calls for or add in some spice. Remember to add in the hotness separately so you don’t burn out everyone who is wanting to taste them! You can’t cool down food once it’s got that hot spice added!
