These Keto Protein Buckeyes are a great way to have a simple snack with a big boost of protein. And with only 4 ingredients, you can be certain that literally, anyone can make this delicious recipe with ease.
I’m always looking for simple snacks to keep around the house. And while it’s tempting to just have junk food lying around for people to munch on, it’s not healthy and we all know it.
This is why I’m a huge fan of these Keto Protein Buckeyes. Not only do they have a great taste but they’re also low in carbs.
One thing I do want to point out is we have a little one here with a soy allergy. What I change in the recipe is the addition of Nestle, which means that the carbs are going to go up, but recipe remains safe for my youngest to enjoy. It’s still considered low carb because it only has 7 grams of carbs, but it more than likely drops it out of the Keto category at that point in time.
I’m only mentioning it because it goes to show you that while it’s good to alter recipes to accommodate allergies and other food needs, it might and often does change the overall nutritional value, for better or worse.
Okay, now that we’ve cleared that up, let’s get back to talking about how these protein buckeyes are a great keto recipe!

Why are they called buckeyes?
Since we’ll be creating a buckeye recipe, it’s important to understand where the term came from. The dessert affectionally referred to as a buckeye is intended to look like a nut from the buckeye tree found primarily in Ohio growing especially well along rivers, streams, and floodplains. The buckeye nut resembles the shape and color of a deer’s eye. Dating back to 1788, the Indians in Marietta, Ohio referred to Col. Ebenezer Sproat, a delegate at the first Northwest Territory court session as “Hetuck,” the Indian word for buckeye.
Ohioans have referred to themselves as Buckeyes since at least the presidential election of 1840 when Ohio resident William Henry Harrison won the presidency. Harrison’s supporters carved campaign souvenirs out of buckeye wood to illustrate their support for their fellow Ohioans. The name has stuck and become quite the popular food item name as well.
Is the buckeye nut poisonous?
As luck would have it, I have a resident expert living with me – my husband who hails originally from Ohio. He says, “The buckeye nut is mildly toxic in the raw state and is not safe to eat. However, the Native Americans were known to peel the nuts from their shells, roast and mash the buckeye nuts to create a paste that they would eat. They would also use the nuts to create a salve to treat rashes and sores.
The bark of the tree can be used to create a medicinal tree. As long as the buckeye nuts are peeled from their shells and roasted, they are safe to eat. However, I would not recommend this to anyone who hasn’t researched or never tried this. The nuts are toxic if not prepared correctly.”

Do buckeyes need to be refrigerated?
My answer is yes. Since you’re using all-natural peanut butter, it’s necessary to keep these stored in the fridge. It also helps these decadent desserts to maintain their shape and appearance similar to the nut in which they get their name.
How long will buckeyes stay fresh?
This is just one of the many reasons why buckeyes are so great. They’ll last for several days in the fridge without losing any texture, taste, or any other sort of issue at all! Just store them in a container and pull out one or two to eat when you have a sweet tooth craving.
Can you freeze buckeye desserts?
You actually can. The key here is to make certain that you make them up ahead of time and then store them in an airtight freezer-proof container. Once you do this, you can then store them in the fridge for up to 1 month.

- 1 cup of Low Carb Chocolate Chips (like Lily’s Dark Chocolate Baking Chips OR Nestle 3 ingredient which has the SAME carb count as Lilly’s AND they are soy-free! Also, double-check the protein powder you use doesn’t have soy in it if you want to make this soy-free. If you need to be free of other allergens sub out the chocolate chips for Enjoy Chocolate chips and just understand they won’t be keto then.)

Combine the peanut butter, sweetener and protein powder. Mix well.
Line a baking sheet with parchment paper and scoop out balls of the peanut butter mixture onto the sheet.
Chill for 15 minutes. When chilled, roll each scoop into round balls.
Freeze for an hour or until hard. Melt your chocolate and dip balls into chocolate mixture.
Let the chocolate harden for 10 minutes, serve immediately and enjoy!
Do you really have to use all-natural peanut butter?
Not necessarily. However, all-natural peanut butter provides more natural ingredients as opposed to other not-so-healthy additives from conventional peanut butter. The next time that you go to the store, compare the ingredients between a jar of conventional peanut butter and a jar of all-natural peanut butter. You’ll be amazed.
Can I use other flavors of protein powder for this recipe?
You can! Using a chocolate protein powder is also a great choice and can bring in a ton of great flavor. Don’t be afraid to experiment with this easy recipe, it just might not be as traditional as buckeyes typically are if you do.

- In a mixing bowl combine the creamy peanut butter, pyure sweetener ad the protein powder. Mix well.
- Line a baking sheet with parchment paper or a silicone mat.
- Using a mini ice-cream scoop or a cookie scoop, scoop out little balls of the peanut butter mixture and place it in the lined baking sheet.
- Chill for 15 minutes in the freezer.
- Now roll each scoop of peanut butter into smooth, round balls.
- Freeze for an hour or until hard.
- Place the chocolate chips in a microwave-safe bowl and melt it in the microwave in bursts of 15 seconds till melted and smooth.
- Hold each chilled peanut butter balls with a toothpick and dip it in the melted chocolate, making sure not to cover it completely in chocolate.
- Let the chocolate harden in the fridge for 10 minutes.
- Serve immediately or store it in an airtight container, in the fridge.
