More often than not, the “get skinny quick” methods don’t keep the weight off. Everyone’s body is different, old habits die hard, and learning to eat healthily is not taught in these diet fads. You don’t have to starve yourself to get healthy. There’s no quick fix that works as well as small and gradual life changes. I’ve been there and know what it takes since I had weight loss surgery several years back.

Some may look at an ingredient or two of this Instant Pot Weight Loss Soup and think, “That’s not good for weight loss, is it?” Healthy weight loss is more than a few ingredients. Healthy weight loss is all about the nutrients and portion control. For example, this soup contains pasta which isn’t commonly seen as something you eat to lose weight.

However, the soup only has a very small amount of pasta and it’s the perfect portion to add in the desired nutrients your body needs. If your body is deprived of certain nutrients, it will be worse for you and may inhibit weight loss or even cause other illnesses. That’s why striking a balance is important. Outside of this, broth soup is low in calories and contains a lot of liquid which isn’t as filling. The noodles add substance while still keeping it healthy.

 

The great part about this recipe is that it basically all get tossed in the Instant Pot until it’s finished. You don’t have to stand around watching and stirring or execute a ton of steps in between. After dicing all the veggies and cooking the chicken (you can cook your chicken in the Instant Pot before starting the soup if you prefer), toss all the ingredients in the Instant Pot in the following order: vegetables, seasonings, tomatoes, chicken, pasta, and broth. Stir and set the valve at the sealing position with the Instant Pot on high and pressure cook mode. Cook for ten minutes and let it naturally release for ten minutes before doing a quick release. Stir and serve!

I came up with the recipe after seeing the weight loss soup in some bariatric groups. That particular soup is recommended during the pre-op liquid diet stage prior to weight loss surgery. I wasn’t a fan of what I saw though since that soup used a packet if soup mix that was super high in sodium and not fresh. So I decided to take that idea and come up with a fresh, homemade version that was also lower in sodium but full of taste!

Tips for Making Instant Pot Weight Loss Soup

 

  • If you don’t like the vegetable choices, you can adjust them to your preference. Be sure to match quantities so the rest of the recipe remains the same. 
  • Once you perform the quick release, be sure to taste the soup to ensure it doesn’t need more salt or pepper. This will change from person to person, so be sure to add it before serving.
  • Do not attempt to freeze this soup as it doesn’t do well when reheated. However, it will last for up to a week in a sealed container in the fridge.
  • If you don’t have time to cook the chicken, canned chicken would be fine, just be sure it doesn’t have a lot of added ingredients and preservatives.

Ingredients

  • 1 (28 oz.) can of No Salt Added Crushed Tomatoes
  • 4 cups of Low Sodium Beef Broth
  • 2 cups of diced Cooked Chicken (how to cook chicken in Instant Pot)
  • ½ teaspoon of Garlic Powder
  • ½ teaspoon of Onion Powder
  • 1 teaspoon of Dried Garlic Flakes
  • 1 teaspoon of Dried Onion Flakes
  • 1 teaspoon of Italian Seasoning
  • 1 small Onion, diced
  • 1 small head of cauliflower, separated into small florets
  • 6 ribs of Celery, diced
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 4 oz. (¼ packet) of Thin Spaghetti or Angel Hair pasta
  • Salt and Pepper to taste

Instructions

In the Instant Pot, add all the vegetables using – onion, cauliflower, celery and both the bell peppers.

Now add the seasonings – garlic and onion powders, dried onion and garlic flakes and the Italian seasonings and salt and pepper.

Add the crushed tomatoes, followed by the cooked chicken and the pasta.

Finally, add the beef broth.

Give everything a good mix.

Put the lid on, making sure that the pressure valve is in the “Sealing” position.

Select the “Pressure Cook” mode. Adjust the ‘Pressure Level’ to “high” and adjust the time, with the “- / +” to 10 minutes.

When Instant Pot beeps, let the pressure release the naturally for 10 minutes and then using the spoon that came with the instant pot, turn the pressure valve to the “Venting” position to do the quick release.

Give the soup a good mix. Taste and add more salt if need.

Ladle in serving bowls and serve immediately. Store the leftovers, covered, in the fridge
