Sure, you can add in any other beans that you want. It’s your recipe. Black beans are just the type of bean that is typically found and associated with Mexican food, but if you want to change it up and add something else, by all means, go ahead! The more beans, the better! 
 

Does this Instant Pot Tortilla Soup have to be spicy?

Of course not. If you’re not a fan of the heat, just take out the hot and spicy ingredients. Not everyone in my family likes heat. My husband is a hot sauce connoisseur, I like a little kick, but my middle one doesn’t want any spice at all. If your family is similar, add spice to the individual bowls and enjoy. The options are limitless with how you can make this delicious dish. 
 

What toppings go with this tortilla soup?

Toppings are one of the best parts of soup! Think cheese, green or yellow onions, fresh jalapenos, parsley, cayenne pepper seasoning, green onions, and the whatever fancies your family’s tastebuds. Instant Pot Vegetarian Tortilla Soup

While there are quite a few ingredients listed for making this soup, I can assure you that it doesn’t take all that long! 
 

Ingredients:

1 avocado
2 tortillas for dipping (optional)
1 can corn– low sodium
One can black beans– we use low sodium OR we make our own in the instant pot
1 can tomato sauce– again, low sodium
One container vegetable broth– low sodium
3 roma tomatoes; diced
1/3 cup sharp cheddar cheese
1 teaspoon pepper
One  teaspoon salt
1 tablespoon cumin
1/2 tablespoon chili powder
1 teaspoon cayenne pepper
 

 

In the Instant Pot or pressure cooker, add in corn, black beans, tomatoes, tomato sauce, and vegetable broth. Stir well. Add in pepper, salt, cumin, chili powder, and cayenne pepper.
Put on high pressure for 7 minutes. Once it’s completed you can slice the avocado. Place soup in bowl and top with avocado and cheese. Use tortilla for dipping.

Cast Iron Chicken Fajita Tostadas

Ingredients

  • 1 lb. Chicken Tenders
  • 1 Pkg. Fajita Seasoning
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Red Onion
  • 1 Pkg. Tostada Shells
  • Optional toppings—sour cream, lettuce, avocado, salsa, etc.

Instructions

1. Cut the peppers and onion into strips and sprinkle the seasoning onto the

chicken.

2. Put about 3 tablespoons of oil in an iron skillet, add the chicken and veggies

and cook over medium heat until chicken is cooked through.

3. Remove chicken from the skillet and slice into short strips and place back into

the skillet.

4. Mix the chicken into the veggies together. Once mixed, spoon a helping onto a

tostada shell.

5. Top with any toppings of your choice.

6. Ready to serve!
