  5. Frees up your mind and time! We are all busy. Sometimes it truly is a mental strain to figure out what we are going to eat, especially if we haven’t got a plan laid out. Meal prepping helps to save your mental focus for other things. No guess-work, it is already done and prepped ahead of time!

Yes! This is just another added benefit of the Instant Pot! It will take it a little bit longer than if it were thawed out but it will still end up tasting great in the end.

Ingredients needed for this chicken recipe using your Instant Pot:

  • 4 tbsp butter
  • 3 cloves minced
  • garlic
  • 1 cup chicken broth
  • 8 oz cream cheese
  • 1/3 cup julienne sun-dried tomatoes
  • 1 tsp Italian seasoning
  • 3 tbsp rice flour or regular flour (for thickening)
  • 4 chicken breasts
  • salt and pepper to taste
  • parmesan cheese – garnish basil – garnish

Add chicken, butter, garlic, sun dried tomatoes, Italian seasoning and chicken broth to the Instant Pot.

Pressure cook for 15 minutes.

Let pressure naturally release and then turn to Sauté. Add cream cheese and melt.

When melted, whisk in the rice flour and let thicken.

Top with Parmesan cheese and basil. Serve with veggies or pasta.

How to Make this Recipe As a Freezer Meal

In a round freezer container add chicken, butter, garlic, sun dried tomatoes, and Italian seasoning. Write a label with the following:

-1 cup chicken broth
-high pressure 15 minutes
-8oz cream cheese
-3 tbs rice flour

Freeze until ready to cook. When ready, defrost just enough to pop out of the container and into the Instant Pot. Add 1 cup chicken broth, then cook on high pressure using manual for 15 minutes.

Let pressure naturally release then remove the lid and use a meat thermometer to make sure the chicken reaches at least 165 degrees F. Otherwise, cook for an additional 2 minutes and check the temperature again. Ours reached temperature in 15 minutes.

Turn the Instant Pot to sauté. Melt in the cream cheese. When the cream cheese is melted, whisk in the rice flour to thicken the sauce. Let the sauce cook until the desired consistency. Add salt and pepper to taste. Top with parmesan cheese and basil. Serve immediately with vegetables or pasta.
