Instant Pot Loaded Mashed Potatoes

One favorite food in the Prater household is mashed potatoes! What’s not to love about a perfectly whipped bowl of spuds? I’ve eaten a big plate of mashed potatoes all by itself many times in sickness and in health. I have also paired it with some wonderful dishes. Mashed potatoes accompany Ribs, meatloaf, turkey & gravy, and so much more! Whether you like to pair your mashed taters or be naughty and eat them without a pairing, Instant Pot Loaded Mashed Potatoes must be on your menu list this week!

This recipe is perfect to accompany your meal any time of the year. But since I’m writing this ahead of Thanksgiving, it’s the perfect addition to your dinner table!

This a judge-free zone. Having said that, I have four Instant Pots I can put to use. You read that correctly, but don’t get stuck on the number. With four of these magical gadgets, our Thanksgiving meal can pretty much be an Instant Pot meal. (Side Note: This doesn’t count my Mealthy Multi Pot or Cosori! EEK!)

I might be a little biased, but these are fantastic recipes to include in your meal plan for Thanksgiving, Christmas, or any holiday or get-together for that matter. Here is a brief glance at some of the tastiest:

 

All that is missing from this list of recipes is mashed potatoes. Who can have Thanksgiving without them?! Don’t even ask my husband or my youngest to go without mashed potatoes during Thanksgiving. They will organize a mutiny and I’ll be stuck with boxed mashed potatoes…..ewww! This recipe is incredibly easy to fix and you will not go wrong following it. Before diving into the recipe, let’s answer a few common questions that people tend to have.

What type of potatoes should you use for this Instant Pot recipe?

Great question. I’m really not overly picky about the type of potatoes and I’ll just grab a sack that’s on sale that week. But you might be partial to a particular potato. However, rest easy knowing that you can use red potatoes, gold potatoes, and even russet potatoes.

Do you peel your potatoes before adding to the Instant Pot? 

I do and I think it’s important. The outside skin of the potato is quite delicious, but not the texture that we’re looking for in mashed potatoes.

Don’t throw the skins away just yet! When I peel my potatoes, I use the peels for another treat to hold my kids over until dinner. I sprinkle just a bit of olive oil, a dash of salt, and crisp them in the oven for another potato treat for my kids. They’re crispy like a chip and incredibly tasty!

What do you do with leftover Instant Pot Loaded Mashed Potatoes?

If you have leftovers (and that’s a big IF), simply store them in the fridge for a few days to enjoy in the next day or two. If you don’t think you’ll eat them in a day or two, put them in a freezer-safe container to freeze for later. I often think of my childhood days when my mom would use leftover mashed potatoes to make potato cakes the next day, too. Except these would be loaded potato cakes!

Can I substitute Greek yogurt in place of the sour cream?

You can. As long as it’s Greek yogurt, you can make that substitution easily. It’s one that I’ve had to do many times and I love that it always works out. Just make certain it’s not flavored. The last thing you’d want is Vanilla or Strawberry flavored Instant Pot Loaded Mashed Potatoes. You might laugh, but it’s been done before.

Are these mashed potatoes creamy or lumpy?

This recipe creates creamy and delicious mashed potatoes. If they’re not creamy enough for your liking, you can always add in more half and a half or sour cream (or Greek yogurt) to get the consistency that you’re looking for.

  • 3 lbs russet potatoes peeled, rinsed and diced
  • 1 stick butter, melted
  • 1 cup half & half (keep more on hand, consistency of potatoes will vary)
  • 1/2 cup sour cream
  • 6 slices bacon, chopped
  • 3/4 cup shredded cheddar cheese
  • 2 green onions, chopped
  • 1 sprig parsley, chopped
  • 1 tsp salt
  • 1 tsp pepper
 

Instructions

 
1. Add diced potatoes to the Instant Pot. Cover with water.

2. Lock cover and set to MANUAL for 5 minutes. Make sure the valve is set to pressure and not leaking.

3. When timer beeps and pressure has fully released, carefully pour potatoes into a strainer. Cover to keep warm.

4. NOTE* if your potatoes are not fully cooked, run them for another 5 minutes on the same setting without adding more water. Water content in potatoes varies causing cook time to vary as well.
 
5. Wipe out the instant pot and set to SAUTE.
6. Cook bacon until crispy. Drain excess grease. Remove bacon.

7. Switch to KEEP WARM SETTING.
 
8. Add potatoes back to the Instant Pot with melted butter and cream. Mash and then whip with an electric mixer or with a potato masher until desired texture is reached. Season with salt & pepper.

9. Fold in bacon, cheese, and green onion.

Mashed potatoes accompany Ribs, meatloaf, turkey & gravy very well! So naturally Instant Pot Loaded Mashed Potatoes are a MUST try!

Ingredients

  • 3 lbs russet potatoes- peeled rinsed and diced
  • 1 stick butter, melted
