People ask me what my favorite meal is to cook in the Instant Pot. I’ve found that all types of meat dishes like chicken, pork, and beef are all really simple, especially given the fact that you can add the meat into the Instant Pot while it’s still frozen! Seriously, get outta town. Crazy, right?

It’s amazing to think how far we’ve come in the advancement of kitchen appliances! Thank you, Instant Pot, for making all our lives easier!

Speaking of frozen, this Instant Pot pork recipe is perfect to make ahead and freeze. Freezer meals are such a huge help when you’re cramped for time or low on energy.

How can freezer meals benefit you?

If you own a freezer and space is available, you need to fill it with some freezer meals. I can’t tell you how many times my days have been so busy that dinner was an afterthought. That’s when prepared freezer meals came to the rescue. I didn’t have to worry about dinner because I could put one of the many prepared freezer meals right into the Instant Pot.

I typically have several weeks worth of freezer meals prepared and ready to use at any given point in time. It’s truly a lifesaver. If I’m feeling under the weather or even out-of-town, I make certain to clearly label the freezer bags so that it’s clear to everyone what’s it in and that way they know how to cook it.

Instant Pot Honey “Soy” Pork Tenderloin

 

Ingredients needed for this Instant Pot pork recipe:

 

3 lbs. pork tenderloin

1 cup homemade “faux” soy sauce ( I make my own in the instant pot. Just click the words for the recipe.)

1 tbsp garlic powder

2 tbsp olive oil

1 tbsp onion powder

1/2 cup honey

1 tbsp ground ginger

salt and pepper if desired

 

Directions to make Instant Pot Honey “Soy” Pork Tenderloin

 

1) Score the top of the tenderloin a few times. This will allow the meat to marinade better and release excess fat while cooking.

 

2) Place the pork tenderloin in a freezer bag.

3) Cover the tenderloin with the remaining ingredients.

 

4) Seal the freezer bag and remove any excess air. Shake up the bag so that the marinade is mixed. Write the cooking instructions on the bag then roll it in half and place the tenderloin in the freezer for up to 1 month.

Cooking Label: Honey Soy Tenderloin 75 Minutes or 1:15 (25 minutes per lb.)

 

NPR Cooking Directions from frozen:

1) Defrost the tenderloin enough to be able to remove it from the bag.

2) Place the tenderloin and all the marinade in the Instant Pot. Scored side up. Do not set it on a trivet or add any extra liquid. The marinade is enough liquid to bring it pressure as it defrosts.

3) Close the lid and turn the pressure valve to sealing. Cook the tenderloin on high pressure for 75 minutes or 1 hour 15 minutes using the “Meat/Stew”, “Manual”, or “Pressure Cook” options. Let the pressure naturally release.

4) Check the internal temperature to make sure it reaches 170 degrees then remove the tenderloin. Set it aside to rest for at least 10 minutes before slicing. If the internal temperature hasn’t reached 170 then let it cook for another 10 minutes.

5) While the tenderloin is resting, simmer the juice left in the Instant Pot on sauté mode to make a glaze. Let the juice simmer for 10-15 minutes until it has reduced and thickened. Then spoon it over the tenderloin and serve.

What I love most about this recipe is that I can make the “soy sauce” homemade to use in it. Buying from the store is fine, but if you have food allergies limiting you, creating your own is the best!

How do you make homemade soy sauce?

I honestly don’t know why I haven’t been making homemade soy sauce for years now. I guess because I didn’t have an instant pot back then, even though I have always had a pressure canner. It’s so crazy simple. It’s a combination of garlic powder, onion powder, ground ginger, olive oil, and some delicious honey. My point is that if you can’t have store-bought soy sauce, there are great options for creating it at home on your own. It’s also a healthier version without all the sodium and extra calories!
