Let’s start with a few basic questions. Does your family eat dinner? If that answer is yes, then meal planning is perfect for your family. Although meal planning might seem a bit overwhelming at first, but once you get a handle on it, smooth sailing. You’ll also find that the entire family can pitch in and help meal plan, also. 

The great thing about meal planning is the versatility. You’re not confined to a specific time period. It’s frustrating to pull stuff out of the freezer, fridge, and/or pantry to decide what to whip up for dinner. I’ve done the hodge podge meals for so long and I understand the frustration. Meal planning allows you to plan for the week, the month, or somewhere in between. Personally, I meal plan a month out by incorporating freezer meals

Meal planning opens up a whole new world of cooking possibilities, allows for fluid transitions between busy schedules, and keeps us all sane!

Can you add freezer meals directly to the Instant Pot?

Yes! As long as you prepared a freezer meal in a manner the entire recipe is together, then all you have to do is remove it from the container or freezer bag and add it to your Instant Pot. There’s no need to thaw anything out or do any more work than that. (*A freezer meal is a meal you prepared and froze; not a store-bought freezer meal). 

Did I mention that this was a time-saver? 

How do you zest a lime? 

Since this Instant Pot Cilantro Lime Chicken recipe calls for lime zest, it’s important to know how to zest it properly. 

Start by washing your lime and then patting it dry. You don’t want to take the chance of having a dirty outer surface!

Next, grab your zester and start rubbing it back and forth on the outside of the lime. Your zest should have a green tint to it since you’re zesting that outside green “skin”. If at any point you notice that you’re no longer zesting on a green area, it means that you’ve gone too far.

Simply roll the lime to another side and start to zest all over again. Zesting is not only really simple to do but it makes the kitchen smell great also!

How do you label your freezer meals before putting them in the freezer?

If you’ve ever grabbed something from your freezer and had no clue what it was or, better yet, how to prepare it, well, then you’re not alone. Just ask my husband. Anyway, before I say too much and embarrass myself, it is important to label your freezer bags/containers. Instead of having a “surprise” meal, you’re going to want to start labeling the food that you’re adding to your freezer. (Check out my other freezer meal tips, too!) 

For this Instant Pot Cilantro Lime Chicken recipe, you’d want to label the outside of the freezer container with a label that reads: 

1 cup chicken broth
1 cup white rice
High pressure 15 minutes
Natural release

Labels make life easier for the family. In the event you’re not around and you ask the hubby (or wife) or your responsible teenager to prepare the freezer meal, all they have to do is follow the label. Basic instructions like “add in 1 cup of chicken broth, 1 cup of white rice, add to the Instant Pot on high pressure for 15 minutes and then natural release” goes a long way with my husband and teenage son.

Combine all the ingredients (minus chicken broth and white rice) together in a container.

Add rice, chicken broth and chicken mixture to the Instant Pot.

Pressure cook for 15 minutes. Release naturally.

Note: If you do not slice the chicken breasts in half they will be too thick and will not cook all the way through with the rice.

Don’t forget to add your freezer label with the following information:

  • 1 cup chicken broth
  • 1 cup white rice
  • High pressure 15 minutes
  • Natural release

Tape the label to the container or write on the freezer bag with a permanent marker and freeze until ready to use.

Instant Pot Cilantro Lime Chicken

Yield: 4 servings

Just wait until you taste the flavor of this Instant Pot Cilantro Lime Chicken. It's one of those easy dinner recipes that you'll be using in your meal plan rotation for weeks and months to come. Plus, it works really well as a freezer meal, too! 


  • 2 lbs. chicken breast (slice in half so that they arent as thick)
  • 1 tsp. lime zest
  • 1/4 cup lime juice
  • 2 tbsp. honey
  • 2 tbsp. olive oil
  • 3 cloves minced garlic
  • 1/3 cup minced cilantro
  • 1/2 cup chicken broth
  • 1 cup chicken broth (add during cooking)
  • 1 cup white rice (add during cooking)


  1. Combine all the ingredients, minus 1 cup chicken brother and white rice, together in a round freezer-safe storage container that fits inside your Instant Pot.
  2. To cook add 1 cup rice and 1 cup chicken broth to the Instant Pot.
  3. Remove the chicken from the container and place it on top of the rice in the Instant Pot.
  4. Close the lid and turn the pressure valve to sealing.
  5. Cook on high pressure using the manual function for 15 minutes. Let pressure release naturally.
  6. Top with fresh cilantro, salsa, or avocado and serve.
