Cooking Instant Pot chicken isn’t hard, it just takes a little bit of time and effort. But once you have the process perfected, you’ll be able to keep cooked chicken on hand which makes meal planning a cinch!

It’s no secret that life is busy. Some would even say hectic. Every day is another day of appointments, errands, baseball practice, soccer games, co-ops, and the list goes on. As your family gets more active, especially during the summer season, cooking for your family is often pushed to the side in favor of convenient and easy fast food. This is why I love using my Instant Pot. I know, without a doubt, that I can have dinner ready in less time it takes me to order my food from the drive through and bring it home.

No matter which meat I cook in my Instant Pot, the meat is always tender. But I really love how simple chicken is to cook in my magic gadget. I don’t have turn it and check to see if it’s thoroughly cooked like I would in the oven or stove top. The Instant Pot cooks it to complete perfection every single time.
 
 

How does using the Instant Pot help with meal prep?

I love being able to use our Instant Pots (yes, multiple – we have several!) to meal prep! I just add chicken (fresh or frozen), push a few buttons and allow the Instant Pot to work its magic. Once the chicken is cooked, I can add it to any vegetables or other Instant Pot chicken meals. It is literally that simple. As an added bonus, I can freeze any cooked chicken I don’t use. On those days where we’re super busy, I reheat the chicken and my family is finished eating in less time it would take me to order takeout.

Should you season your chicken before adding it to the Instant Pot?

Depends on what you’re planning to use the chicken. If you’re unsure what you want to add the chicken to, then keep it plain or you can season it with salt and pepper. If you have a recipe in mind, you’ll want to add whatever seasonings the recipe calls for, or go with the seasonings that sound good.

How To Cook Instant Pot Chicken

This recipe calls for one pound of boneless chicken breast. If you want to make this with more chicken than used below, go for it. Remember to adjust the water level as needed.

Makes about 4 cups of shredded chicken

 

Ingredients to make instant pot chicken

 

  • 1 lb. of skinless boneless Chicken Breast (2  to 3 pieces)

  • One cup of Water or Chicken Stock. I make my own chicken broth. 

  • Salt and Pepper

Instructions to make instant pot chicken.

 

Season the chicken breasts with salt and pepper.

Pour a cup of water or chicken stock in the insert pot insert.

Place the seasoned chicken on a trivet and carefully lower the trivet in the instant pot insert. The liquid should not touch the chicken.

Attach the lid, ensuring the pressure valve is in the “Sealing” position.

Select the “Pressure Cook” mode. Adjust the ‘Pressure Level’ to “high” and adjust the time to 10 minutes using the “- / +” button.

When Instant Pot beeps, let the pressure release the naturally for 10 minutes. Then, using a thick tea towel, turn the pressure valve to “Venting” position to perform a quick release.

Carefully remove the trivet.

Chop, dice, slice or shred the chicken and use in your favorite recipe.

Notes

  • You can use chicken thighs instead of the breasts. The cooking time remains the same.

  • Do not discard the liquid remaining in the instant post. The liquid is packed with flavor. Use it to flavor your favorite soup or stew.

 

How do you freeze cooked chicken?

Once you have your chicken cooked, you can either choose to freeze it like it is, or shred it and freeze it instead. Simply purchase some freezer-proof bags or containers, add a label and annotate the date and ingredient (i.e. 9/15/19 Chicken). Place the bag or container in the freezer to use later. When it comes time to use, simply unthaw on a low setting in the Instant Pot or a few seconds in the microwave and eat. If you like to keep frozen cooked chicken in the freezer, make sure to move the older chicken to the front.

What are ways that you can use Instant Pot chicken?

Get creative! You can add it to a salad or your favorite chicken recipe, like this chicken teriyaki meal!
