Homemade Fideo Soup {Instant Pot or Pressure Cooker}

Homemade Fideo Soup is full of flavor and a hearty meal that feeds the whole family with leftovers to spare. It is a true Mexican entree that sure to please even those who have never tried it.

This Fideo Soup is near and dear to my heart. While living on the border in El Paso, this recipe was actually taught to me by a refugee from Mexico and her mom. I’ll never forget their kindness and generosity when my husband was deployed and they helped me move to our new home.
 
This Mexican soup is just one of  several authentic Mexican dishes and I will always cherish all the recipes that they taught me during our time together. I’ve taken the original recipe and converted it to be Instant Pot/Pressure Cooker-friendly, which is what I’m sharing with you today.

Breaking bread with these wonderful ladies is a memory that I’ll never forget. In fact, they were surprised I not only would love for them to teach me their ways of cooking, but they were truly welcome at our table. These are memories I continue to cherish, experiences I will never forget and I’m glad that I was able to meet and spend time with these two gentle souls. 
 
These ladies are dear to my heart as wonderful friends, Sisters in Christ, and they helped make a difficult time in my life so much easier! Not to mention, when my husband returned, he made it home just in time for Cinco de Mayo. I was able to fix the recipes they had taught me for his homecoming celebration!

Why Cooking and Friendship are the Perfect Combinations

You guys all know that I love to cook, but this recipe really does bring up the perfect point of why cooking with someone is always a lot of fun. Creating in the kitchen with family members or friends always results in conversation, laughter and some delicious taste-testing! 

And while it’s fun to cook alone, it’s always better with someone by your side. This recipe, along with other favorite recipes in my stash, has taught me that friendships can grow anywhere, even in the kitchen.

What are Fideo Noodles?

The term fideo is a Spanish word that translates to “noodles.” They’re made of durum wheat and water and are then cut thin and dried. 

The pasta can be prepared a few different ways. One method is to make it with the durum wheat and water, cut it and let it dry out while the another method can be to make it with the same ingredients, dry it, fry it up in oil then prepare to eat.

You can’t go wrong with either method. The main aspect of the Spanish noodle is that it’s very thin. 

Personally- I cheat a tad and just buy the noddles already fixed. #lifehack

Instructions to cook Fideo soup

Turn the Instant Pot on the “Sauté” mode and let it heat for a couple of minutes. When it says ‘HOT’, add a tablespoon of olive oil.

Add dry fideo noodles and let it toast for 2 to 3 minutes, till it is a fragrant and dark golden in color. Remove it to a plate to cool and keep aside.

Add the remaining tablespoon of oil to the instant pot insert. Add the chopped onions and garlic and sauté for 3 to 4 minutes until slightly soft and fragrant.

Add the can of fire roasted crushed tomatoes along with the ground cumin, paprika, salt, and pepper. Give it a good mix.

Add the chicken or vegetable stock.

Blend everything using an immersion blender. (Or dump the contents of the instant pot into a regular blender. Blend it and return it back to the instant pot insert).

Add the toasted fideo noodles.

Turn off “Sauté” mode. Attach the lid, ensuring the pressure valve is in the “Sealing” position.

Select the “Pressure Cook” mode. Adjust the time with the “- / +” to 2 minutes.

When Instant Pot beeps, allow the pressure to release naturally.

Check and adjust seasoning.

  • 1 (8 oz.) dry Fideo Noodles
  • 1 (28 oz.) can of Fire Roasted Crushed Tomatoes
  • 1 large onion, chopped
  • 4 fat cloves of Garlic, chopped
  • 1 teaspoon of ground Cumin
  • 1 teaspoon of Paprika
  • 6 cups of Vegetable or Chicken Stock
  • Salt and Pepper to Taste
  • 2 tablespoons of Olive Oil
  • Cilantro and Lime wedges to garnish

Instructions
