This simple Instant Pot recipe is one of my family’s favorites. In fact, it’s one they request so much that it’s on repeat. I find myself relying on this dish a lot when we’re super busy during the week or just searching for a simple comfort food recipe that doesn’t require a ton of work. 

Do you remember that scene in the movie Forrest Gump when Bubba was telling Forrest all about shrimp? That’s how my family is when it comes to barbecue.

There’s bbq chicken, bbq chicken wings, bbq chicken breasts, bbq chicken thighs, bbq pork, bbq ribs, wet bbq ribs, Memphis-style bbq ribs, Kansas City style ribs, hickory-smoked bbq ribs, pulled pork bbq, bbq Boston butt, bbq smoked salmon, bbq turkey, bbq brisket, and I could go on and on, but I think you get the picture.

What can I say except we love our BBQ! In fact, when deciding where to eat, we usually end up at a barbecue joint. We just love our BBQ!

Using Freezer Meals to Prepare Easy Meals in Bulk

I love to prep and plan ahead for dinner and we do a lot of freezer meal recipes. What I always aim for are recipes that are simple, can easily be prepared in bulk and also has the versatility to be used to create other meals. 

This BBQ Chicken recipe is a good example. You can cook the BBQ chicken and eat it as is for one meal and then use it to make faux sliders with lettuce for the next meal.

Ingredients needed to make Instant Pot Low Carb BBQ Chicken Lettuce Wraps in the Instant Pot

  • 1/2 cup BBQ sauce homemade
  • 1 tbsp Italian seasoning
  • 1/4 cup apple cider vinegar
  • 1 tbsp Worcestershire sauce be careful you use one that is soy free! 
  • 2 lbs chicken thighs
  • 1/2 cup chicken broth
  • 1 additional cup BBQ sauce (I prefer this one for low carb if I do not make it homemade!)
  • rolls, buns, or lettuce for wraps

Combine the chicken, Italian seasoning, apple cider vinegar, Worcestershire sauce, and BBQ sauce. Mix.

Add chicken to the Instant Pot. Pressure cook for 20 minutes. Naturally release.

Shred the chicken and mix in part of the sauce.

Mix in the bbq sauce.

How to make this Low Carb BBQ Chicken Lettuce Wraps freezer meal recipe:

Once you complete the first step of the recipe, create a label that says:

  • BBQ Pulled Chicken
  • 1/4 cup chicken broth
  • high pressure 20 minutes
  • 1 cup BBQ sauce

Freeze the meal.

When ready to cook just pull the meal out of the freezer.

Run under water until you can pop the chicken from the container into the Instant Pot.

Then complete the time and directions for your Instant Pot the recipe indicates.

Instant Pot Low Carb BBQ Chicken Lettuce Wraps

Ingredients

  • 1/2 cup BBQ sauce
  • 1 tbsp Italian seasoning
  • 1/4 cup apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 2 lbs chicken thighs
  • 1/2 cup chicken broth
  • 1 additional cup BBQ sauce (
  • rolls, buns, or lettuce for wraps

Instructions

  1. In a round storage container that fits into the Instant Pot combine the following- chicken, Italian seasoning, apple cider vinegar, Worcestershire sauce, and 1/2 cup BBQ. Place the lid on the container and shake until mixed.
  2. Add the 1/2 chicken broth to the Instant Pot. Place on the lid and turn the pressure valve to sealing. Cook on high pressure using manual for 20 minutes.
  3. Let pressure release naturally.
  4. Remove the lid and shred the chicken. Reserve about 1/2 cup of the sauce and discard the rest.
  5. Mix in the extra cup of BBQ sauce and the reserved sauce.
  6. Serve on whole-wheat rolls for sliders, or wrap in lettuce for a low carb option.
