Since it lands on the same date every year (March 17th), it’s a super simple holiday to prepare and get ready for.

We love celebrating St. Patrick’s Day because it’s a day that focuses on learning about other cultures without the pressure of gifts or anything along those lines. And this recipe that I’m presenting today is one that always finds its way to the dinner table on St. Patrick’s Day.
If you’re scratching your head about what exactly cauliflower colcannon is, you’re not alone. Before we dive into anything else, let’s clear up what the word even means!
What is colcannon made of?
There are a few different versions of colcannon that can be made, but typically it’s known for its shortlist of ingredients. The main ingredients are milk, butter, and kale, but we’ve substituted the kale and tossed in some cauliflower instead. Oh, and the added bacon is just a must-have if you ask me.
It’s a common dish in Ireland so there are actually several versions out there to create. You’ll also find numerous options that include cabbage.

Instant Pot Keto Cauliflower Colcannon
Serves – 4 to 6
Ingredients to make Instant Pot Low carb Cauliflower colcannon
1 large head of Cauliflower, broken into florets
2 tablespoon of Butter
Salt and Pepper to taste
8 oz. of thick-cut bacon, chopped
3 cups of sliced Cabbage
½ cup of chopped Onion
Instructions to make homemade colcannon
Add water and cauliflower to steamer trivet in Instant Pot; pressure cook.
Mash the cauliflower, add salt, pepper, and butter.
Sauté bacon in the Instant Pot.
Add the cabbage and onion to the Instant Pot. Sauté until veggies are cooked.
Add the mashed cauliflower and mix. Save a bit of the bacon to garnish with later on. Add the rest of the bacon to the Instant Pot and mix.
Place the colcannon into a serving dish and garnish with bacon.
Serve the cauliflower colcannon as a side dish. It goes well with my Air Fryer Guinness Steak Skewers.

- 1 large heat of Cauliflower, broken into florets
- 2 tablespoon of Butter
- Salt and Pepper to taste
- 8 oz. of thick cut bacon, chopped
- 3 cups of sliced Cabbage
- ½ cup of chopped Onion
- Add a cup of water to the Instant Pot insert.
- Place the steamer trivet inside the Instant Pot insert and place the cauliflower florets in the teamer trivet.
- Put the lid on, making sure that the pressure valve is in the “Sealing” position.
- Select the “Pressure Cook” mode. Adjust the ‘Pressure Level’ to “high” and adjust the time, with the “- / +” to 3 minutes.
- When Instant Pot beeps, let the pressure release the natural way for 5 minutes and then using a thick tea towel, turn the pressure valve to “Venting” position to do the quick release.
- Carefully take out the steamer trivet. Wear oven mitts to be safe.
- Place the steamed cauliflower in a large bowl, add salt and pepper and butter. Mash with a fork or a potato masher until creamy. Keep aside.
- Rinse the Instant Pot insert and turn it back on the ‘Sauté’ mode.
- Add the chopped bacon. Sauté for 5 minutes, stirring constantly till the bacon is brown and crispy. Transfer the crispy bacon in to a paper towel lined plate and keep aside. Keep the rendered fat in the Instant Pot.
- Add the sliced cabbage and onion to the Instant Pot. Add salt and pepper and sauté for 5 to 6 minutes, till the veggies are cooked through.
- Add the mashed cauliflower and mix well.
- Reserve about a tablespoon of crispy bacon for garnish and add the remaining to the Instant Pot. Mix it in.
- Transfer the cauliflower colcannon in to a serving dish and garnish with the reserved bacon.
- Serve the cauliflower colcannon as a side. It goes really well with my Air Fryer Guinness Steak Skewers.
