Cast Iron Chicken Fajita Tostadas

 

My husband was roommates with a Mexican-American and a Columbian-American while stationed in Germany. All three of these guys enjoyed cooking and my husband learned quite a bit about hispanic cuisine. After we were married and stationed in El Paso, Texas, I took my culinary skills to a new level when I learned to cook authentic Mexican cuisine from scratch. (Trust me, my family was thrilled by this addition to my culinary skills as well.)

Anyway, back to my husband. He’s not a chef extraordinaire by any stretch of the imagination. Although he cooks some really good meals really well, he isn’t well-rounded in the kitchen. He also had never used a cast iron skillet prior to our marriage.

Actually, he still hasn’t used a cast iron skillet other than while camping. Who knows, maybe he’ll begin using some of my recipes, such as this one, to amaze his camping buddies. However, he also knows that cast iron makes some of the best tasting dishes anyone could ask for.

What makes cast iron cooking taste so delicious?

In my opinion, cooking with cast iron is delicious because the cast iron continues to get “seasoned” every single time you cook. The flavors from meats, veggies, and anything else you get cooked, somehow just…stay with it. (and not in an unclean way) Literally, every time you cook with your cast iron pan, it gets better and better. 

Can you cook with cast iron in the oven? 

Yes, cast iron can take high levels of heat so cooking in the oven with it can happen. As can cooking over the campfire. Make certain that you use an oven mitt to hold onto the handle as cast iron will get hot completely throughout and you’ll burn your hand easily.

How do you clean a cast iron pan?

When I’m done with cooking in it, I clean it with hot water in the sink. No soap, no soap suds. Nothing. This gets rid of the food particles and germs but leaves the flavoring. And if you happen to have food particles that just won’t wash off, you can add some water to the pan and boil for a few moments to try to break loose. How long does a cast iron pan last?

Who says there has to be a limit? The longer you cook with it and season it, the better and better it gets. I know people who have cooked with their cast iron pans for years and still rave about it. Seems to me that they blow the majority of new cookware out of the water! 

I grew up learning to cook in the Cast Iron. To me, it was just the way life was and what we had on hand to use in the kitchen. Then as I grew up and left home, I realized that it was more than just a pan! Cast iron is one of the best ways to cook!  Did you grow up with cast iron, too? Ingredients


– 1 lb. Chicken Tenders
– One Pkg. Fajita Seasoning
– 1 Red Bell Pepper
– One Yellow Bell Pepper
– 1 Red Onion
– 1 Pkg. Tostada Shells
– Optional toppings—sour cream, lettuce, avocado, salsa, etc.

Directions

1. Cut the peppers and onion into strips and sprinkle the seasoning onto the
chicken.

 
2. Put about 3 tablespoons of oil in an iron skillet, add the chicken and veggies
and cook over medium heat until chicken is cooked through.


3. Remove chicken from the skillet and slice into short strips and place back into
the skillet.


4. Mix the chicken into the veggies together. Once mixed, spoon a helping onto a
tostada shell.

5. Top with any toppings of your choice.

6. Ready to serve!

 

I know that this recipe is crazy simple, and it’s meant to be. With all the business and stresses of every day life, it’s nice to have a recipe that you know you can make without fail. If you have a few moments to cook in the kitchen, you can make this cast iron pan recipe with ease.

And honestly, it’s one of those meals that tastes great no matter what the weather is so if you like to meal plan, it’s perfect all year long! We have this at least once a month in our house and I never hear anything complaints!
