When I first heard of low-carb diets, I expected to substitute cardboard for everything I loved. Sticking to a low-carb diet sounds like a lot of sacrifices must be made and, in some ways, sacrifices must be made. Removing bread from your diet is one of the biggest sacrifices you’ll make, but it’s recipes like this that make it that much easier to transition. My Keto bread recipe takes care of the guessing game and is absolutely exquisite! 

If you recall, I have to create more gluten-free and soy-free recipes for my family because of food allergies. This is why I’ve been experimenting a lot more with recipes as well as my Air Fryer lately. I know I’m not the only parent having to deal with food allergies, so anything I can create to help another family with their restricted meal plan is more rewarding than you can ever imagine.

What I’ve found is that when I create my recipes homemade that have dietary restrictions on them, they’re always a zillion times better than anything that I can buy in the store. And even though buying something gluten-free and soy-free at the store might be easier, I think that tastes trumps that any old day.

Soy Free Air Fryer Zucchini Breadsticks

The Air Fryer is a wonderful kitchen gadget! First, the food is incredibly less greasy and fatty than the regular frying method. And even though that might seem like an obvious observation, it’s one that still makes me happy time and again.

Secondly, cooking in the Air Fryer is astonishingly simple. It’s as easy as adding in the food, setting the temperature, setting the time and chilling out. In just a few minutes, my zucchini breadsticks are crisp and ready to devour. Oh, did I mention that cleaning the Air Fryer is a cinch?! 

Plus, the Air Fryer is easy enough to use that even my boys can cook with it by themselves. That’s a big deal, too!

How do you make a gluten-free breading for zucchini breadsticks?

This recipe uses almond flour. I hate that my son has a soy allergy, but I’m also thankful his allergy has forced me to experiment with other ingredients such as almond flour. It is so good! It adds a really great flavor and texture to the breadsticks that won’t even have you realizing that you’re enjoying a gluten-free treat.

Can you freeze Soy-Free Zucchini Sticks?

No. Well, let me rephrase that. You actually can – but don’t. Freezing zucchini’s will result in one thing and one thing only – mush. 

This Air Fryer recipe is meant to be cooked and eaten fresh. Now, that doesn’t mean that you can’t reheat them the next day or later on in the night if you have leftovers, but that is a whole different ballgame than freezing them.

If you have any leftovers, simply put them in an airtight container and place them in the fridge. You can then reheat them for a few seconds in the microwave when you’re ready to enjoy it. 

Keep in mind that they probably won’t be crisp any longer, but they still taste great.

Do you need to peel the zucchini before grating them?

This is a matter of preference. I’ve made these breadsticks both ways and I honestly don’t have a preference. However, be certain to thoroughly wash and clean the zucchini before you start grating. You definitely don’t want dirt or tiny particles in the recipe.

How do I get rid of the moisture from the zucchini?

This is actually a pretty crucial step. In order for them to fry and get crisp, you need to do what you can to get out all the excess moisture. Zucchini tends to hold a lot of water. The easiest and most efficient method  I’ve found to remove the water is grabbing a towel and pressing down firmly on the grated zucchini. It takes about a minute or two. Do your best to remove the excess water.  

Do this a couple of times to try and get rid of it all. You probably won’t be able to get ready of every single drop, but remove as much of it as possible before frying.

Grate the zucchini, salt and let sit for 10 minutes.

Air Fryer Zucchini Bread Sticks

Squeeze out as much moisture as possible.

Combine zucchinis, almond flour, Italian seasonings, salt, pepper, 1/2 cup of cheese and egg. Mix well.

Line the Air Fryer basket with parchment and spread in the mixture. Try to make it as flat as possible.

Air Fry for 15 minutes. Carefully flip and Air Fry for another 10 minutes.

Ingredients

  • 3 medium sized Zucchini
  • 1 large Egg
  • ½ cup of Almond Flour
  • 2 teaspoon of Italian Seasonings
  • ¾ cup of Shredded Mozzarella, divided
  • Salt and Pepper

Instructions

  1. Using box grated, grate the zucchinis. Lightly salt the grated zucchinis. Cover and let it sit for 10 minutes.
  2. Using a fine mesh strainer or a tea towel, squeeze out as much moisture from the zucchinis as possible.
  3. In a large bowl combine the zucchinis, almond flour, Italian seasonings, salt and pepper, ½ cup of mozzarella cheese and the egg. Mix well.
  4. Line the air fryer basket with parchment. Spread the zucchini mix into the basket, gently pressing to make it as flat as possible.
  5. Air fry at 350 F for 15 minutes. Carefully flip the zucchini bread, and air fry again at 350 F for 10 minutes.
  6. Cut into and serve the zucchini breadsticks immediately with marinara sauce.
