Air Fryer Toasted Pumpkin Seeds

 

  • 1 to 1 ½ cup of Pumpkin Seeds (from a medium sized (3 to 4 lb.) Pumpkin)
  • 1 tablespoon of Olive Oil
  • 2 teaspoon of Coarse Kosher Salt (or less than 1 teaspoon of table salt)
  • 1 teaspoon of coarsely grounded Black Pepper

Instructions

Like I said above under the tips-

*Wash the pumpkin seeds thoroughly to get rid of the pumpkin gunk. I dump the seeds along with the gunk in a large bowl, fill it up with water and give it a good scrub. Then I let it soak for about 20 to 30 minutes. Most of the gunk settles down and I can easily scoop the seeds into a mesh strainer.

*Then I hold the strainer under running water and let the water rinse the residual pulp. Next I spread it on a paper towel lined baking sheet and pat it dry with another paper towel. I let it dry on the counter for another hour or until most of the moisture is gone.

*Next combine the almost dried pumpkin seeds, olive oil, salt and pepper in a large mixing bowl and give it a good mix, making sure each seed is coated in oil and seasoning.

*Spread it on a well-greased air fryer basket.

*Air fry at 360 F for 20 minutes, shaking the basket after every 5 minutes. In case you have more seeds, the cooking time might increase by another 5 to 10 minutes.
