I’m not going to lie, we don’t really observe taco night every Tuesday. We don’t care if it’s a Tuesday or Friday if we want Mexican food or tacos, we’re definitely going to have them. We also don’t make sure we have tacos or Mexican food every Tuesday either. When you have a family with a busy life, you prepare what you can, when you can, and rejoice over making anything at all. With our diet restrictions in this house due to allergies, it’s even more of a victory since meal options can be slim.

This recipe for an Air Fryer Sweet Potato Quesadilla was everything I hoped it would be and more. It’s a vegetarian dish so I don’t have to worry about preparing any meat. However, nobody missed the meat because the flavors in the dish were so bold that it satisfied even my pickiest eaters. Not to mention, meat is always the priciest part of a meal, so it was a plus to get that price break on such a tasty dinner. We will definitely be making them again, taco night or not.

How Do You Make an Air Fryer Sweet Potato Quesadilla?

There really is no difficult aspect of preparing this recipe. You simply grab a skillet and saute your onion and sweet potato with all the spices. Once that’s done, toss in the corn and black beans and let them cook for a few minutes just to heat up. Grab your tortillas and place half a slice of cheese and some of the fillings on one half. Top it off with the other half of the cheese and then fold the tortilla and secure it with a toothpick like you would a little appetizer sandwich. Throw them in the air fryer and you’ve got the perfect vegetarian Mexican dinner for your family.

You don’t want to end up with a mess to clean up because your tortillas got blown all over the place.
  • If you don’t want to use queso fresco cheese, you can use whatever cheese option you prefer. My suggestion for a substitute would be shredded Monterey cheese. However, I know each person has their cheese preference and changing it up won’t hurt anything.
  • Make sure your sweet potatoes are softer before placing them inside your tortilla to be baked. You don’t want to be eating partially uncooked sweet potatoes. Unless you like it that way, it may ruin the consistency and success of the dish.

  • 10 Corn Tortillas
  • 1 large Sweet Potatoes, peeled and grated (about 2 cups of grated sweet potato)
  • 1 can of Black Beans, drained and rinsed
  • 1 cup of Corn  (frozen/fresh or canned)
  • ½ cup of diced Onion
  • 1 teaspoon of ground Cumin
  • 1 teaspoon of Garlic powder
  • ½ teaspoon of Paprika
  • ½ teaspoon of dried Oregano
  • 1 (10 oz.) block of Queso Fresco, sliced
  • 1 tablespoon of Olive Oil
  • A handful of Cilantro + more to garnish
  • Salt and Pepper to taste
  • Oil spray or mist

 

How do you make Air Fryer Sweet Potato Quesadilla?

Heat up your oil in a cast iron or non-stick skillet.

Add the onion and sauté until the onions have softened.

Add the cumin, garlic powder, paprika, and the oregano, along with salt and pepper and mix it in.

Ingredients

  • 10 Corn Tortillas
  • 1 large Sweet Potatoes, peeled and grated (about 2 cups of grated sweet potato)
  • 1 can of Black Beans, drained and rinsed
  • 1 cup of Corn Kernels (frozen/fresh or canned)
  • ½ cup of diced Onion
  • 1 teaspoon of ground Cumin
  • 1 teaspoon of Garlic powder
  • ½ teaspoon of Paprika
  • ½ teaspoon of dried Oregano
  • 1 (10 oz.) block of Queso Fresco, sliced
  • 1 tablespoon of Olive Oil
  • Handful of Cilantro + more to garnish
  • Salt and Pepper to taste
  • Oil spray or mist

Instructions

  1. In a large nonstick or cast iron skillet, heat up a tablespoon of olive oil over medium high heat. 
  1. Add the chopped onion and sauté till for 2 minutes, or until the onions have softened. 
  2. Add the grated sweet potatoes and let it cook for couple of minutes.
  3. Add the cumin, garlic powder, paprika and the oregano, along with salt and pepper and mix it in. 
  4. Now add the black beans and the corn and give it a good toss. Let the back beans and the corn warm up for a couple of minutes. Check and adjust the seasoning. 
  5. Let the filling cool down for about 5 minutes. 
  6. Take a corn tortilla and place a thick slice of the queso fresco on one half of the tortilla. 
  7. Add about 2 tablespoon of the sweet potato filling. 
  8. Place another slice of the queso fresco on top of the sweet potato filling.
  9. Fold the tortilla to form a half-moon shape. Secure with toothpicks. Repeat with the remaining tortillas. 
  10. Lightly spray the air fryer basket with oil spray. Place about 4 prepared tortilla in it and give them a light coat of cooking spray. 
  11. Air fry at 380F for 4 minutes. Flip spray again lightly and air fry for another 2 minutes at 380F. 
  12. Remove the toothpicks and cut each quesadilla into half and serve immediately. 

Notes

  • It is very important to secure each quesadilla with a toothpick before air frying. Or else, the air fryer fan will blow the top open. 
  • In place of queso fresco, you can used shredded Monterey Jack cheese as well.
