Ingredients

             For BBQ Chicken

 

For Salad

  • ½ cup of finely chopped celery (about 4 stalks)
  • ½ cup of chopped Red Onion (1 medium or ½ of a large onion)
  • ½ cup of tomato (1 medium or ½ of a large tomato)
  • ¼ cup of chopped Chives
  • ¼ cup of shredded Cheddar Cheese
  • 1 cup Soy-free Mayonnaise
  • 2 teaspoon of Yellow Mustard
  • ¼ cup of Sugar-free BBQ Sauce
  • Salt and Pepper

In a bowl, mix garlic powder, paprika, onion, powder, salt, and pepper. Rub spice mix to coat the chicken.

Remove the chicken and brush with bbq sauce. Return to the Air Fryer.

Ingredients

BBQ Chicken

  • 1 lb. Chicken Breasts
  • 1 teaspoon of Garlic Powder
  • 1 teaspoon of Onion Powder
  • 1 teaspoon of Smoked Paprika
  • Salt and Pepper
  • Oil
  • ¼ cup of Sugar-free BBQ Sauce

Salad

  • ½ cup of finely chopped celery (about 4 stalks)
  • ½ cup of chopped Red Onion (1 medium or ½ of a large onion)
  • ¼ cup of chopped Chives
  • ¼ cup of shredded Cheddar Cheese
  • 1 cup Soy-free Mayonnaise
  • 2 teaspoon of Yellow Mustard
  • ¼ cup of Sugar-free BBQ Sauce
  • Salt and Pepper

Instructions

BBQ Chicken

1. In a small bowl mix together garlic and onion powder, smoked paprika, salt, and pepper. 

2. Generously season both sides of all the chicken breasts with the prepared seasoning.

3. Place the chicken breasts in a well-greased air fryer basket and lightly spray with cooking spray.

4. Air fry at 400F for 15 minutes.

5. Generously brush the BBQ sauce on the chicken.

6. Air fry at 400 F for another 8 minutes, or till the thickest part of the chicken breasts reads an internal temperature of 165 F.

7. Let it rest on the counter for 10 minutes, before shredding them using the 2 fork method.

Salad

1. In a large bowl combine mayonnaise, mustard, BBQ sauce, salt, and pepper. Whisk well till smooth.

2. Add the chopped celery and red onion to the dressing. Mix it in.

3. Next, add the shredded chicken and fold it in.

4. Add the shredded cheese and chives. Mix well.

5. Let it chill in the fridge for at least 30 minutes.

6. Serve immediately.

Notes

Instead of chives, feed free to use the green parts of a spring onion.

Absolutely! You can use any choice of vegetables in this chicken salad to make it more healthy and filling. I wanted a basic recipe to fully enjoy the barbecue flavor of chicken, so I used little vegetables. You can add any greens like romaine lettuce, shredded cabbage, kale, spinach, or arugula. You can add olives, boiled potatoes, carrots, bell peppers, etc. If you are adding more vegetables, then you will need to make more dressing for the salad as well. 

 You can make this salad a meal of its own by adding more veggies and beans. Pinto beans or red beans would go perfect with this Air Fry BBQ Chicken salad.

If you are cooking chicken in an air fryer for the first time, then these tips can be very useful for you if you have cooked chicken in an air fryer before you still may want to see these tips from the experts.

The temperature control settings of air fryer vary among different brands and models. It is possible that the air fryer you use may not have the exact temperature setting required in this recipe. In this case, you need to check the manual for the suggested temperature setting. Also, your altitude can play a part too. Our recipes are tested multiple times though and I have various brands, so usually no issues at all.

Standing your chicken against the sides of the air fryer basket keeps the chicken pieces from touching if you desire.
