Air Fryer Salmon Croquettes

I am so excited to share this Air Fryer Recipe with you! Growing up my mom would make Salmon patties on a regular basis. My Dad loved them, honestly they were a huge hit for the entire family. I loved mine with some ketchup, they were just so good!  S

o as I began developing recipes, I decided to  try my hand kicking up those salmon patties I grew up on a notch. These Salmon Croquettes are a hit for the whole family, kids included!

First things first – if you don’t have an air fryer, what are you waiting for? Seriously, I say it every week but outside of my instant pot I love my air fryer equally well!

The next, gather all your ingredients together so you are ready to go!

Ingredients

  • 1 (14.75 oz.) can of Alaskan Pink Salmon, drained, and bones removed
  • 1 medium-sized potato, boiled and mashed
  • 2 fat cloves of Garlic, minced
  • 1 tsp of dried Dill (or use 1 tablespoon of fresh dill)
  • 1 Egg
  • ¼ cup of Breadcrumbs
  • ½ cup of Panko Breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Drain the can of salmon, reserving the liquid. Remove the large bones and skin and mash it lightly with a fork.                          
  2. In a large bowl, combine the mashed salmon, mashed potato, egg, minced garlic, drilled dill, salt and pepper and the breadcrumbs. Mix it well.
  3. Add the reserved liquid from the salmon can, slowly. We want a slightly sticky mix and not a gloopy one.                                                                                                                
  4. Spread the Panko breadcrumbs in a shallow plate.
  5. Using a 2 inch ice-cream scoop or your hands if you’re like me 😉 , scoop out the mix and form in to an oblong shaped patty.                                                                                                                             
  6. Dredge it completely in the Panko crumbs. Keep aside. Repeat with the remaining mix. We got about 10 oblong patties.
  7. Place about 5 or 6 patties in the greased air fryer basket. Spray the patties lightly with cooking spray or oil mist.                                                                                                
  8. Air fry at 390 F for 12 minutes, turning once.                                                                            
  9. Repeat with the rest of the prepared patties.
  10. Serve hot with ketchup.

Notes

  1. Instead of dried or fresh dill, use any herb of choice. Parsley works really well too.
  2. You can use a little lemon zest and a splash of lemon juice, if the fish smell bothers you too much.
  3. The long oblong shape is the traditional shape of a coquette, but you can most definitely do a round patty like I grew up on if you prefer.
