Although Tennessee is where I hang my hat, West Virginia will always be home. I was born and raised right there in the Mountain State. I love all things West Virginia and I have to share a little bit of history so that you can love it just like I do. 
 

What is West Virginia famous for?

A lot of things. But if you’re looking something more factual, West Virginia is known for Civil War history, natural beauty and sights of the Mountain State. Have you ever driven on the roads on West Virginia and pulled over just to look around? There are seriously some amazing sights that you can see anywhere that you look. 

 

What food is West Virginia famous for?

West Virginians are proud of our heritage including our recipes. Recipes that are deeply embedded with history and tradition. History and traditions such as Fried Taters & Ramps. After a long winter, West Virginians happily welcome the sight of ramps because it means Spring has sprung and winter is done. There’s even entire festivals that welcome Springtime and Ramps in West Virginia.

Then you have one of my favorite meals. Old Fashioned West Virginia Brown Beans & Cornbread. It is well-known that West Virginia is one of the poorest states. Families have long since learned how to stretch dollars and feed families on very little income. Coal Miner families especially learned how to feed their families on pennies with a big mess of Brown Beans & Cornbread. It is a cheap, but hearty meal that feeds many hungry mouths.

If you really want to fix another West Virginia favorite, try some Buckwheat Pancakes! Buckwheat was originally planted in 1859 in Preston County, West Virginia. That year a frost in June had wiped out traditional crops, so farmers responded by planting Buckwheat in July for what would be a late October harvest.

The name suggests it is a kin to wheat or rye, but that isn’t so. Buckwheat is actually a fruit that is kin to rhubarb! Today there’s not a shortage of buckwheat pancakes in the state. Plates are filled with the delicious taste of pancakes with butter, syrup and sausage and served at churches, fire halls, farmhouses and more across the state. Don’t miss the Preston Co Buckwheat Festival either. It is a fun and delicious West Virginia festival!

Then there’s the Pepperoni Roll. As I mentioned in my original Pepperoni Roll Recipe, the West Virginia Pepperoni Roll isn’t just a food, it is a way of life. A deep history that goes back many years. As the video I’ll share states below, if you have one of these in your hand, you’re home.
 
 
However, as a Military Wife, my life took me all over the United States and many times I couldn’t go home. So that’s why I had to make my own. Passing down a long-standing tradition from my home state – the coal mines, the farmers, the country store clerks, the outdoorsmen and women, and every other walk of West Virginia life – to my children. Pepperoni Rolls are home, they are history, and they are our legacy.

Also, Rocket Boys! Wait, what? You don’t know who the Rocket Boys are?! Just sit right there and allow me to educate you. BUT I HIGHLY suggest you read the book FIRST and then watch the movie. The story of Rocket Boys (you may be more familiar with October Sky) was written by none other than West Virginia’s famous Homer Hickam.

The story takes place in Coalwood, West Virginia and is a true story about Homer and his friends building rockets in rural West Virginia back in 1957. The story was originally written as a publication in the Smithsonian’s Air & Space magazine but received so much praise in 1995, that Homer then went on to turn it into a book thrusting him into international fame. As with most good books, a movie follows.

While I have a lot of passion for all things West Virginia, I love creating recipes that remind me of my home, too. This is why I’m so excited to share this Air Fryer recipe with you!

Ingredients to make air fryer pepperoni rolls

Instructions to make this air fryer recipe

Heat the water in the microwave for 30 seconds. The temperature of the water should be between 100F to 115F. If it is too hot, let it sit on the counter until it cools down to the correct temperature.

 

Add the oil, sugar, salt and the yeast to the water and stir to mix. Leave it undisturbed for 10 minutes.

The yeast will start to foam and bubble.

In a large bowl, add the bread flour. Make a well in the middle and add the egg and the yeast water.

Mix everything with a silicone spatula until it comes together in a sticky dough. Cover and let it proof for 2 hours in a warm dry place.

By the end of 2 hours, it would have doubled in size. Punch the air out the dough and knead it till smooth.

Form a ball and cover it again and let it proof for another hour in a warm dry place.

Now turn the dough onto a good flour surface and knead it again for a minute. Form the dough into a round.

Divide the dough into quarters and then divide each quarter into thirds. You should get 12 balls out of the dough.

Flatten each ball and place about a tablespoon of shredded cheese and 4 to 5 slices of pepperoni on each flat dough. Fold one side over to the other and pinch the seams together, sealing the seams. Fold the corners and do the same.

Place all the stuffed rolls in a baking tray and cover with a kitchen towel and let it rise one last time for 30 minutes.

Place 4 rolls in a greased air fryer or CrispLid.

Air fry at 370F for 7minutes.

Repeat with the rest of the rolls

Serve warm.

I think that a nice salad would be a great accompaniment to this delicious and simple meal. In my house, we normally don’t worry about having anything extra besides this! It’s just that good. Note: These make a great treat for a picnic or food to pack for a road trip.

How do you store leftovers of these Air Fryer pepperoni rolls?

If you happen to have leftovers, consider yourself lucky. This just means that you’ll get to enjoy them for another meal! Simply store them in an airtight bag or sealable container and place them in the fridge. They should be good for several days, but honestly won’t last that long, especially if you have a teenaged son!

What happens if my bread dough didn’t rise while it was resting?

This could be because the active yeast has expired or is no longer good. Depending on the age of your yeast, it may not activate with the rest of the ingredients. One way to check is if you don’t notice it starting to “foam” up after you add it to the water, then it’s probably too old and not going to cause the bread to rise.
