Air Fryer Mini Pepperoni Pizzas are a perfect lunch, dinner, or in between snack for the kids. These fluffy, gluten-free, and soy-free mini pizzas are amazing! The sauce is bursting with flavor and the gooey cheese is an inviting sight. The aroma that fills your kitchen will create smiles on little faces.

Well, Christmas is over and it’s that awkward stage where you’re really not sure what you’re supposed to do with yourself. The kids are busy with their Christmas gifts and you’re busy boxing up all the decorations. It also means meals consist of a lot of leftovers and Christmas treats. For us, the menu has included quite a few easier recipes. Even though I’ve had more time to cook, we’ve been spending it soaking up the extra time together as a family.

Don’t get me wrong, I absolutely love baking, especially when it comes to having fun in the kitchen and special recipes, like this recipe for the kids. Seeing their little faces light up make it worth the little bit of effort it takes to make this recipe. Outside of that, I enjoy getting away in the kitchen since it seems to bring me a bit of peace. The holidays can be a hectic time and baking really helps wash away all that stress. However, taking time out of the kitchen allows me more time with the kids which also makes my stress melt away. Their little laughs can melt everything away.

When I say, “more time to cook,” I mean only a little teensy-weensy bit of extra time. We’re on break from schoolwork, no more Christmas parties or get-togethers, no more plays, no more shopping. This is why I love having an air fryer. It’s so easy to take recipes that would usually take me forever and I can make them in a fraction of the time. These Air Fryer Mini Pepperoni Pizzas are pretty easy to toss together, and I don’t have to babysit the oven while they cook.

Since I have to worry about food allergies in my house, recipes can be a little more in-depth or complicated from time to time. And I know we’re not the only family who has had to alter their diets because of allergies. That’s why I enjoy sharing recipes like this with you that have saved me time in the kitchen while keeping my children safe. Not to mention, I don’t like feeding them junk, so these homemade Air Fryer Mini Pepperoni Pizzas ensure they have a tasty, fun meal without sacrificing health.

I assure you that Air Fryer Mini Pepperoni Pizzas aren’t complicated. Not only are they simple to toss together, but they’re gluten-free and soy-free as well. Even if you don’t have allergies to worry about, it’s nice to have a healthier option for pizza in general. Pizza is absolutely delicious, but it can contain a lot of ingredients that aren’t the best for you. However, this recipe gives you a chance to eat pizza with a healthier, soy free twist to it.

Alright…..so how do you make these cute, pepperoni pizzas?

Notes

1) Bob Red Mill’s 1:1 GF Baking Flour is the beast flour blend that works perfectly with this recipe. If using a gluten-free blend that doesn’t contain Xantham Gum, please add ¼ teaspoon of xantham gum to along the flour.

2) Gluten free blends varies from brand to brand, depending what ratio of flour has been used. So do not add the warm water all at once. Slowly keep adding in till the entire sticky dough comes together in to a ball. Cover and let it rise.

I don’t know about you, I truly enjoyed the holidays, but am also glad they’re over so life can slow down a bit.
