Air Fryer Sweet Potato Chocolate Chip Muffins

On weekends when we are not out creating memories on grand adventures, I love to relax and stay in and bake. Baking is something that always makes me feel relaxed, brings me peace in the midst of chaos, and I can treat my family to tasty creations. 

Since Thanksgiving is over and we are now home, I spent this weekend in the kitchen. I wanted to create some recipes that we could have on hand for the week while also stocking our freezer with extras. I love meal planning. It is always nice to have things ready and prepared for the week ahead. 

 

 

 Sweet Potato Chocolate Chip Muffins

I created this sweet potato chocolate chip muffin recipe for us to enjoy as a morning breakfast or even mid-day snack once we were done with school. I used a gluten-free all-purpose flour and then added in some spices to give it that pumpkin spice flavor. I can’t express how delicious these muffins are, especially right out of the oven. 

If you enjoy pumpkin you will love the sweet potato muffins. I don’t know if you have ever had a sweet potato pie, they are beyond amazing. I almost think it would be hard to pick which I like more, pumpkin or sweet potato to be honest.

Air Fryer Muffins 

If you have an air fryer, muffins are a must-make! The air fryer offers that light and fluffy muffin as the end result. It cooks these sweet potato chocolate chip muffins perfectly. Pull them out, let the muffins cool slightly and then dive into pure bliss. 

Air fryers use hot air to circulate all around the basket. This process allows food to cook at a faster speed and cook the food from all angles. While it is known for giving that deep-fried crispy food, air fryers also offer delicate and delicious muffins like this recipe here.

Sweet potatoes are always in our kitchen. They don’t have to be used just for a sweet potato casserole during the holidays. I love cooking and baking with them because they are high in antioxidants, which are known as beta-carotene, which is really wonderful for the body.

You can find tons of minerals and vitamins in this root veggie. From calcium, iron, vitamin B, vitamin C, antioxidants, and even a good source of fiber. We tend to use sweet potatoes more often than say white or russets due to health benefits.

Air Fryer Sweet Potato Chocolate Chip Muffins

 

Ingredients

Instructions

1) In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon and ginger. Keep aside.

2) In another large bowl, crack the eggs. Add both the sugars, oil, milk and the mashed sweet potato. Beat it well with an electric beater until well combined.

3) Add the flour mixture and gently fold it in.

4) Stir in the chocolate chips.

5) Now either you can use well-greased ramekins or silicone cupcake liners. We used the silicone cupcake liners and used Mason jar lids of keeping them in place.

6) Divide the batter into 12 ramekins or silicone cupcake liners.

7) Air fry at 340 F for 10 minutes.

8) Let it cool in the air fryer basket for 10 minutes before you take it out. Let the muffins cool completely on a wire rack.

9) Serve warm or at room temperature.
