One of the hardest times of the year to stay on track with our diet is during the holidays. First, we have Halloween with all of its candy and treats, then here comes Thanksgiving and Christmas shortly after. There are so many treats and holiday food during this time of the year that it feels impossible to stay in line. Plus, you feel like a scrooge if you skip on the food at potlucks or family gatherings, which can result in hurt feelings and a few more notches on our belts.

When I began eating Keto, one thing I was worried I was going to miss was the stuffing. I wasn’t prepared to fully sit on the sidelines while I watched everyone else chow down without remorse. The only thing left to do was develop my own delicious keto stuffing recipe.

I often like to let the host know ahead of time, if it’s appropriate, that I have dietary restrictions. That way they are prepared one way or the other. However, this isn’t always an option. Stuffing and dressing are very similar and are often used as an interchangeable terms in this day and age. However, to get technical, stuffing is the mixture used to stuff a turkey or other main course. The dressing is the side dish that’s served separately outside the bird. However, many people unstuff the bird once it’s finished and the stuffing becomes the dressing. This is most likely why it’s become an interchangeable term.

What is Stuffing Made of?

All stuffing is made out of bread cubes as the base and commonly contains celery, rosemary, thyme, sage, and chicken stock. Any average stuffing recipe you come across will usually contain these ingredients. However, there are all kinds of recipes for stuffing and some may use cornbread, other veggies, or other stocks and broths instead. 

 

Is Stuffing Unhealthy?

It depends on how it’s made and what type of unhealthy you’re thinking of. Stuffing is usually made out of bread which means a serving of stuffing is like eating bread. This in itself makes stuffing a little more on the unhealthy side. However, like this recipe, you can substitute out the more unhealthy aspects (which is really only the bread) and make it a healthier option. By doing this, it’s pretty easy to fit most dietary restrictions. Switching out the chicken stock for vegetable stock and changing to a vegan-friendly butter will also make it safe for vegetarian and vegan diets.

Does air frying add carbs?

It shouldn’t. But if you’re adding in a ton of grease or other extra ingredients, it can be a reason that your food carbs increase. Just put the food in that are already keto-friendly and you shouldn’t have to worry about an increase in the carb count at all. 

Is using an air fryer healthier than baking?

Actually, it can be! Just think about it. If you’re using your air fryer to cook foods but aren’t adding in any other type of oil or anything like that, it might be a healthier option than baking in your oven. With baking, we grease up pans and that does get soaked into the food that we’re eating as well. So while it might not be a big variance, there is still the possibility that you’re getting more fat and calories into your food because of that.

What are the pros and cons of an air fryer?

Everyone will probably have a different thought and opinion on this, but here are some of my favorite things about cooking with an air fryer.

  • Easy to clean

I love this about cooking with an air fryer. It’s so simple and easy to clean since there isn’t any greasy residue leftover from the cooking. 

  • Healthier cooking option than other methods

Since you’re not technically frying in grease or oil, this can be a much healthier way to cook foods and eat them. In fact, you can cut down on oil usage by 50% or more than you would typically use. 

  • Affordable

It’s not expensive at all. You can easily buy this without busting the budget. Or, if you like to be gifted your appliances, make certain to add the air fryer to your holiday wish list this year! 

As far as cons go, I really don’t have any except for the fact that I wish I could pack in more food than what space actually allows. But if that’s my only complaint, then it’s really not a complaint.

Cube your bread and Air Fry for 10 minutes and set aside.

Heat up a small pan with butter. Add onion, celery, garlic, sage, rosemary, thyme, salt and, pepper. Saute until onions are soft.

In a bowl, combine the bread cubes, the onion-celery mixture, butter, and chicken stock. Mix well and let sit for 10 minutes.

Pour the stuffing mix into a cake pan and cover with foil. Air Fry for 10 minutes. Remove foil and Air Fry for another 2 minutes.

Tips for Making Air Fryer Keto Stuffing

 

  • Be sure to allow the stuffing mixture to sit for a few minutes once all the ingredients have been added together. This will allow the bread to soak up the chicken stock and other flavors, giving the stuffing a uniformed flavor throughout.
  • The two minutes of extra cooking is to give the stuffing a nice color. If desired, this step can be skipped.
  • A 7-inch cake pan works best for this recipe and most air fryers. If you don’t have one, use something similar if possible. 
  • Be sure to cover your pan before cooking the stuffing. This helps it cook more evenly and helps it to not burn in some place while not cooking in others.

Ingredients

  • 1 loaf of Keto Bread, cubed
  • 1 medium sized Onion, chopped
  • 4 fat cloves of Garlic, minced
  • 4 to 5 ribs of Celery, diced small
  • ½ teaspoon of ground Sage
  • 1 teaspoon of dried Rosemary
  • 1 teaspoon of dried Thyme
  • ¼ cup of melted Butter
  • ½ cup of Chicken Stock
  • Sat and Pepper to taste

Instructions

  1. Cube the loaf of the keto bread into bite sized pieces and place them in the air fryer basket.
  2. Air fry at 350 F for 10 minutes, shaking the basket every 2 to 3 minutes to make sure it is evenly toasted.
  3. Keep the tasted bread cubes aside to let it cool.
  4. Heat up a small sauté pan over medium heat and add a tablespoon of melted butter.
  5. Next add the chopped onion, celery, garlic, ground sage, dried rosemary and thyme, along with salt and pepper.
  6. Sauté over medium heat for 3 to 4 minutes, or till the onions are soft. Remove from heat and let it cool slightly.
  7. In a large bowl, combine the toasted bread cubes, onion-celery mixture, remaining melted butter and chicken stock. Mix well and let it sit for 10 minutes for the bread to soak up the chicken stock.
  8. Pour the stuffing mix in a 7 inch cake pan and tightly cover with a foil.
  9. Air fry at 320 F for 10 minutes. 
  10. Remove the foil and then air fry at 400 F for 2 minutes to get some color. Serve immediately.
