Air Fried Coconut Crusted Cinnamon Bananas

This is an indulgent treat that is made healthier because you air fry it instead of frying it in a pan of oil. The Air Fryer circulates heat around the food to cook it evenly and you get that same deep fried texture without all the grease.

These air fried coconut crusted cinnamon bananas are rich in flavor with a nice sweetness to them. The coconut gives these bananas a nice little crunch that surprises the taste buds.

By now you know I am a fan of all the fun gadgets out there from the Air Fryer to the Instant Pot. These magic gadgets intrigue me and they make cooking a cinch. My Air Fryer allows me to create that deep-fried texture without it being soaked in grease.

Most recipes call for little or no oil, but I still get that nice crunch when I sink my teeth into it regardless. These bananas are no different. They have such a nice crust on them and I guarantee you can’t eat just one of them.

They are addictive and they are child approved! It is a great way to entice kids to eat more fruit, too. They won’t even notice it is a banana with the coconut and cinnamon covering it.  

These coconut crusted cinnamon bananas are also Paleo friendly if you happen to be on the paleo diet. If you are unaware of the Paleo diet, it is a healthy, modern diet consisting of only a select amount of foods.

The Paleo requires forgoing processed foods, legumes, refined sugars, and more. You mainly eat foods like grass-fed products, fruits and vegetables, seafood, nuts, seeds and eggs. All the foods in this diet are foods that were available or consumed during the Paleolithic era.

Air Fried Coconut Crusted Cinnamon Bananas

 

Ingredients

  • 4 ripe, but firm Bananas
  • ½ cup of Tapioca Flour
  • 2 large Eggs
  • 1 cup of Shredded Coconut Flakes
  • 1 heaped teaspoon of Ground Cinnamon
  • Coconut spray

Instruction

  1. Cut each banana into thirds                                                                                                     
  2. Make an assembly line:
    1. Pour the tapioca flour into a shallow dish.
    2. Crack the eggs in another shallow bowl and whisk lightly.
    3. Combine the shredded coconut and the ground cinnamon in the third shallow dish. Mix well.                                                                                               
  3. Dredge the bananas in tapioca flour and shake off the excess.                                  
  4. Dip the bananas in the beaten eggs. Make sure it is completely coated in egg wash.
  5. Roll the bananas in the cinnamon–coconut flakes to fully coat it. Press it firmly to make sure the coconut flakes are adhering to the bananas. Keep them in a flat tray.                                                                                                                                               
  6. Liberally spray the Air Fryer basket with coconut oil.                      
  7. Arrange the coconut crusted bananas pieces in the fryer basket. Spray with more coconut spray.                                                                                                                            
  8. Air fry at 270F for 12 minutes.                                                                                                   
  9. Dust with ground cinnamon and serve warm or at room temperature with a scoop of Low Carb ice-cream (optional).                                                                                 

Notes

  • If not on a paleo diet, you can use cornstarch or even all-purpose flour in place of tapioca flour.
