I prefer a quick and easy lunch I can whip up for the family. It is a quick prep dish that takes minutes to crisp up in the Air Fryer. It gives it that crunchy tortilla shell with a cheesy and savory center. The garlic, onion, cumin and salt and pepper help flavor the corn and beans nicely.

Meatless Monday Air Fryer Black Bean Corn Quesadillas 

If you take part in Meatless Mondays, you might consider this dish to serve up for the family. This vegetarian quesadilla is excellent for lunch or supper. Black beans have 39 grams of protein in just 1 cup! That is a whole lot of protein to help fuel your body to get through that 2 pm slump. Also, lent is coming up! So this would be a good recipe for the lent season too!

Tips for Making Air Fryer Black Bean Corn Quesadillas 

Toothpicks | Use toothpicks to ensure the tortillas stay together for cooking. If you don’t do this step, the quesadillas will pop open when they are in the air fryer. 

Fresh Corn | Feel free to prepare sweet corn on the stove or the grill, then cut off cob and use. When in season, I have found that fresh corn adds more vibrancy to the quesadillas. If not in season, canned sweet corn is tasty as well. 

Cooking Spray | I use cooking spray to spritz over the tortilla shells as this will help give them a more crispy texture once they are done cooking. A light mist works. You don’t want to saturate the tortillas. The cooking spray depends on your preference. 

Bite Size Pieces | Make sure as you are chopping up the onion that it is in bite-size pieces. Same for mincing up the garlic. You want small pieces instead of long or bulky pieces. 

Pizza Cutter | I have found this to be a pro tip! Use a pizza cutter to slice up your quesadillas once done to serve! The pizza cutter slices right through without pulling at the filling.

Ingredients

Air Fryer Black Bean & Corn Quesadillas

  • 4 Flour Tortillas 
  • 1 can of Black Beans, drained and rinsed-NOTE: If we use can, we use low sodium to cut down on excess sodium. You can also make fresh black beans which is what we normally do using my instant pot or pressure cooker.  Here’s my recipe for how to fix black beans. 
  • 1 cup of Corn (frozen/fresh or canned- I freeze my own when corn is in season & use that)
  • ½ cup of diced Onion
  • 2 fat cloves of Garlic, minced
  • 1 teaspoon of Chili Powder
  • 1 teaspoon of ground Cumin
  • 1 cup of shredded Cheese (we used the Mexican Blend)
  • 1 tablespoon of Olive Oil
  • Handful of Cilantro + more to garnish
  • Salt and Pepper to taste
  • Oil spray or mist

Instructions

1) In a large nonstick or cast iron skillet, heat up a tablespoon of olive oil over medium high heat.

2) Add the onion and garlic and sauté for 2 minutes, or until the onions have softened.

3) Next you will add the cumin and the chili powder and mix it in.

4) Now add the black beans and the corn, along with salt and pepper. Toss it in. Let the black beans and the corn warm up for a couple of minutes. Check and adjust the seasoning.

5)Add the chopped cilantro and mix it well. Let the filling cool down for about 5 minutes.

6) Take a tortilla and sprinkle about 2 tablespoons of the shredded cheese on one half of the tortilla.

7) Top cheese with ¼ cup of the black bean-corn filling.

8) Sprinkle another 2 tablespoons of cheese on top of the black bean-corn filling

9) Fold the tortilla to form a half-moon shape. Secure with toothpicks. Repeat with the remaining tortillas.

10) Lightly spray the air fryer basket with oil spray. Place a couple of the prepared tortilla in it and give them a light coat of cooking spray.

11) Air fry at 400F for 4 minutes. Flip, spray again lightly, and air fry for another 4 minutes at 400F.

12) Remove the toothpicks and cut each quesadilla into half and serve with sour cream, avocado, jalapeno slices and/or salsa.

Notes

  • It is very important to secure each quesadilla with a toothpick before air frying. Otherwise, the air fryer fan will blow the top of the quesadilla open.

I am sure you will enjoy how simple these bean and corn quesadillas are to make. My whole family cheers when they see it plated because they are that good! Quick prep, easy and fast cook time and the cleanup isn’t too bad either. Plus, anytime kids love a recipe- that is a win win! My kids LOVE real food though because that’s what we serve.

You can always reach for a gluten-free tortilla as well if you have someone in the family that has a gluten intolerance. We have used gluten-free shells in the past and they cook up the same as the regular. Give it a try today!

Now importantly- If you have a soy allergy, like we do too, using an alternative that is soy free also works! This recipe was created but not posted before our soy allergy diagnosis in my youngest. Since then we have switched to a soy free alternative like La Tortilla Factory.
